Another simply and good dinner idea I changed up a little, from the friends at Kraft. We all seemed to like it, the kids especially liked the olives, of course.
4 small boneless skinless chicken breast halves (1 lb.) (I used 8 tenders)
5-6 fresh Roma tomatoes, diced
1/2 cup black olives, chopped
Juice and zest of 1 lemon
1 cup shredded Mozzarella & Parmesan cheese blend
2 cloves Garlic, diced
Salt
Pepper
1 pound penne pasta, cooked
HEAT large nonstick skillet on medium-high heat. Add chicken; cover. Cook until golden on each side or until done about 3-6 minutes on each side. Remove chicken from skillet.
ADD tomatoes, olives, lemon zest and garlic to skillet. Cook 4 min. or until hot, stirring frequently. Season to taste with salt and pepper.
RETURN chicken to skillet; cook 1 min. or until hot. Top with cheese. Serve over pasta.
