Sugar Doughnut Muffins



These are reminiscent of my days working in a bakery, let me share with you... Baking doughnuts and rolling them in sugar or icing with chocolate, plain or maple icing at only 5 in the morning! Ahh those were my younger days. lol. After the doughnuts, we'd either start cake orders or get the breads going. I worked in a small town grocery store/deli/bakery. I started in the deli first, where we shared this room (below) and was later promoted to the bakery. We had this huge BOOS block table, and the deli would get just this little corner to use for prep, lol. There were plenty of good times there. The gal I'm with (that's me in the red), is the reason behind my username. We dubbed ourselves Luv Bug, after some old country song by George Strait, "Lovebug" we heard EVERY morning while working. I've since gone on to other jobs, married, had 3 kids and moved a few times. She is still there, doing awesome cakes! When we went back home to visit once, I snuck in to surprise her but it was after hours, so I left her a note that said "Hi Luv Bug!" and she knew I was around!



I love a good sugared doughnut twist just as much as a jelly filled one. It didn't take much decision to want to whip these little gems up, or time at all! They were done baking at 18 minutes. For me it was about 25 minutes from start to finish. Perfect for a weekend morning treat.

3/4 cup granulated sugar
1 large egg
1 1/2 cups all purpose flour
2 tsp baking powder
1/4 tsp salt
1/4 tsp ground nutmeg
1/4 cup canola oil
3/4 cup milk
1 tsp vanilla extract

1 tbsp butter, melted
1/2 cup granulated sugar, for rolling (I added a little cinnamon too)

Preheat oven to 350F. Lightly grease a muffin tin with non stick cooking spray.
In a large bowl, beat together sugar and egg until light in color.
In a small bowl, whisk together flour, baking powder, salt and nutmeg.
Pour into egg mixture and stir to combine.
Pour in oil, milk and vanilla extract.
Divide batter evenly into 10 muffin cups, filling each about 3/4 full.
Bake for 15-20 minutes, until a tester inserted into the center comes out clean.
While muffins are baking, melt butter and pour remaining sugar into a small bowl. When muffins are done and still warm, lightly brush the top of each with some melted butter, remove from the pan and roll in sugar. Cool on a wire rack. Makes 10 muffins.

(about the shapes, while baking they began to sink in the middles, then looked like a little hole in the middle (like a doughnut!), but then they puffed up near the end leaving that cute edge.)

  17. Papa and I just went over this sweet treat and decided we can't wait for me to get back on my feet -- he'll probably try it one day this week. Instead of a breakfast treat, it will be our dessert one evening. They look so good. And so do you in the bakery in 1995!!

  18. I just finished making (and eating) those cupcakes! Theyre SOOO good, and really easy. They really are just like donuts in a nice cupcake form. they were really easy and seem like they will be real crowd pleasers! I'm bringing them to a meeting tomorrow, where I'm sure they'll be a hit!

  22. I've made something similar (mine used cinnamon sugar) and they were DELISH! Mine didn't call for the whole muffin to be rolled in the sugar either. I think that's a terrific idea.

    I was doing my regular morning browse on tastspotting and found this little jewel. I too have the same story of working in a bakery and loved your story (everyone has one!) I have always seen recipes for Donut muffins and have always wanted to try. Well I saw your picture and said to myself, that's it, no more wondering, get up and make it RIGHT NOW!, and I did.......................OH .....MY.....GOD (pick any god you like), it was absolutely amazing and sooooo ridiculously easy. I double the batch, melted more butter for coating (trust me, you will need it) and made way more sugar and cinnamon (which you can keep for the next batch in a container, no need to waste). I packaged them and gave them to all my friends and tucked them in my partners lunch (I received a text in the late afternoon from him, when I know he opens his flask of tea and reaches in his bag for something sweet with his first sip of tea and the text read: "Mmmmmmmm" See you tonight!) Ohhh I better make more since I gave the rest away!
    Honestly, this is such a great recipe. Tell all your friends and just enjoy.
    Oh by the way, if there is any left (which I highly doubt there will be) just microwave them for 12 seconds to just warm or sugar will melt and enjoy them all over again, like they came out of the oven. Thanks for sharing this recipe with all of us. That's what recipes are all about.
