We were sent a package of Musselman's apple sauces and extra goodies. I really loved the Healthy Picks Granny Smith flavor, it was just like eating a tart green apple! Yes I was kind enough to share with the kids, so I only had one of them. The Totally Fruit Mixed Berry apple sauce I did save a couple for some muffins. I have been on a mini muffin kick lately, freezing them for the kid's lunch boxes. I really love the Totally Fruit line of apple sauces too, they are packed with flavor!
Good Morning Muffins
Adapted from their site. Makes 48 mini muffins
6 tablespoons butter
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon cinnamon
1/2 teaspoon salt
2 eggs
2/3 cup brown sugar
1 1/2 cups MUSSELMAN'S Totally Fruit Mixed Berry
Heat the oven to 375 degrees. Grease a mini muffin tin and set aside. In a small microwave-safe bowl, melt the butter on high for about 30 to 60 seconds; set aside to cool slightly.
Sift together the flour, baking powder, baking soda, cinnamon, and salt into a large mixing bowl. In another large bowl, whisk together the eggs and brown sugar. Stir in the applesauce and melted butter until the mixture is smooth. Pour the apple mixture over the flour mixture. Mix with a wooden spoon until combined and you can't see any traces of flour.
Fill the mini muffin tins about two-thirds full with batter (I use my smallest scooper). Bake for 12 minutes.
