Sunday Night Football Cookbook: Taste of the NFL: Lemon Pepper Tilapia: Review

"As you read this, millions of people in America are struggling with hunger. In fact, 1 out of every 6 people in our country face this serious issue – many of them are children. For 20 years, Taste of the NFL has been working to kick hunger. While we're proud to report that we've raised more than $10 million during that time, we're saddened to report that the need to do more is greater than ever. We hope you'll support our efforts by making a contribution.
Since 1992, the Taste of the NFL has rallied the country's top chefs and the NFL's greatest to raise money in support of food banks throughout the United States. The efforts culminate at the Super Bowl with The Party with a Purpose®. Held on the eve of Super Bowl, this event is a unique way to experience exceptional cuisine, meet NFL players and coaches, and support our fight against hunger. Through the efforts of hundreds of volunteers who help make Taste of the NFL the single most successful charitable event at the Super Bowl, Taste of the NFL continues to help feed the 37 million Americans who have turned to their local food banks for assistance. Millions of needs, thousands of families and dozens of new hunger projects have been affected by this major volunteer effort. Our goal: end hunger." source

Sunday Night Football Cookbook: Taste of the NFL has introductions by Faith Hill and John Madden. There's 150 great family recipes from America's pro chefs and NFL players. This book is available online through Amazon.
I was offered to review this book, and let me say quite a few recipes caught my eye. Peppery glazed chicken wings, Garganelli pasta with broccoli, Warm chocolate hazelnut pudding, Lobster and Brie mac and cheese and a few others.

Well since I already had some Tilapia in the freezer, and most of the family was away for the day, I decided to make myself some fish for lunch (they don't like fish). I used the Indianapolis Colt's chef Bob Sander's recipe for Lemon Pepper Tilapia. It's a very easy recipe with minimal ingredients. Simply lightly pan fry the fish and season with a flavorful sauce. This was great, I loved the sauce with it.

Unsalted butter
zest and juice of a lemon
chopped fresh parsley
flour
salt and freshly ground pepper
tilapia fillets
lemon pepper
olive oil
