We're not practicing veganism, but I chose to review this book for any new healthy recipes we can add to our menu. Sometimes I am happy to make something such as a vegan recipe for my lunch, just because I know they would not eat it (there's a lot of tofu and other great looking recipes in here) so I make it for myself. I was happy to find a quinoa side dish for dinner. Quinoa is new to us, and Mr. was first to try it at some friend's where he was working...so hey! if he liked it, I had to make it! I made the Mediterranean Quinoa Pilaf. There's quinoa, veggie broth, balsamic vinegar, lemon juice, olive oil, salt, (fresh) toms, artichoke hearts and kalamata olives in this. WOW! As the quinoa and veggie broth were cooking, it smelled SO good! Once you see the cute little curly tails on the quinoa, then you add in everything else. I am also new to using balsamic vinegar, and was a little taken back on the strong tangy smell once it hit the hot quinoa. It looked good once it was all together. I made everyone taste some, so I could see if it was something to make again. Well, the balsamic and the olives threw us off. Maybe I should've used less balsamic and regular olives, and they would've eaten it. But I have not given up on quinoa, I am looking for more recipes, because we did like it.


I also chose to make Roasted Chick Peas, Please. Another new to us food, roasted style (we've eaten hummus). I have actually been wanting to make these for a while now, and she happened to have a recipe for them. These have cumin, salt, pepper, garlic, paprika and turmeric powder mixed on them. I was surprised how quickly these roast up, 45 mins at 450'. Wow, these smelled great while roasting, and the flavors tasted even better than I imagined. The kids loved them too, they thought they tasted like corn nuts! This was such an easy recipe and a great snack.

Mmm, biscuits! A whole book on biscuits! A gorgeous hardcover book full of recipes, photos, detailed directions and tips. I decided to make two recipes, that would be combined into one. Baking Powder Biscuits and the Overnight Biscuit, Sausage, and Apple Casserole. It was delish, infact it may become a regular item around here. I made half the recipe for an 8x8 pan since the kids don't normally eat this kind of food. Mr. and I loved it! Biscuits, sausage, cheddar cheese, apples and eggs all cooked up!



Overnight Biscuit, Sausage, and Apple Casserole
Serves 8

Sausage and apple is one of my favorite food combinations, and I find ways to cook it into everything from quiches to this soufflé-like casserole, great for a brunch or long weekend.

2 pounds bulk sausage
2 tart apples, cored and sliced
6 cups torn or cut biscuits in 1⁄2-inch pieces
9 eggs, beaten
3⁄4 teaspoon Dijon mustard
1 1⁄2 cups grated sharp cheddar cheese
3 cups milk
Salt and freshly ground black pepper

Fry the sausage in a skillet, breaking it up as it cooks, and drain on a paper towel. Reserve the fat and let the sausage cool. Saute the apples in the reserved fat, remove from pan, and let cool.

Move the biscuit pieces to a large resealable plastic bag.

Whisk together the eggs, mustard, cheese, and milk in a large bowl. Stir in the sausage and apples. Season to taste with salt and pepper. Transfer the mixture to the plastic bag. Place the bag inside another resealable plastic bag with the zipper facing another direction in order to prevent leaks. Refrigerate at least 2 hours, preferably overnight or up to 2 days.

When ready to bake, preheat oven to 350 degrees F. Pour mixture into a buttered 13 x 9 x 2-inch baking dish or divide between two 1 1⁄2-quart casseroles. Bake covered 30 minutes. Uncover and bake another 30 minutes until eggs are set and the center measures 200 degrees F on an instant-read thermometer.

Twist Organic Flavored Water: Review



Twist water from TalkingRain beverage company. It's a natural blend of premium water and a twist of juice.

If your kids don't like plain water, try substituting with something like organic twist water! It is a natural blend of premium water with a twist of juice and only 9 calories. Better than any sugary juice drinks or even soda. It is however, sweetened with organic agave nectar but does not have any artificial ingredients or flavors.

For our review, we were sent Mango Acai and Wild Strawberry flavors. I chilled these over night and we took them outside to enjoy. They were so nice and cold. I've tried a lot of flavored waters, and haven't been thrilled with many...until I tried Twist! Seriously, they are great! First of all, there are no artificial sweeteners (a big turn off for me), the flavors were so bright and delicious. I couldn't pick just one as a fave. The kids loved them too!
