Udi's “What the Hack” Giveaway and Recipe: Udi's Double Vanilla Muffin Tiramisu Trifle



Udi's recently had a contest “What the Hack”  meaning you get creative and make a recipe or create a tip using Udi's products that are turned into something different. I was challenged to hack a recipe and am also being offered to let you get creative too! 

I made Udi's Double Vanilla Muffin Tiramisu Trifle. I took Udi's gluten free Double Vanilla Muffins and used them as lady fingers turning them into a favorite dessert, Tiramisu. It was the perfect Father's Day & Anniversary treat for my Husband and I. The muffins held up so beautifully and tasted great.

Udi's Double Vanilla Muffin Tiramisu Trifle
serves 6

2 large eggs, separated
1/2 cup plus 1/2 tablespoon sugar
8 ounces mascarpone cheese
1 cups brewed coffee, cooled
1 1/2 oz. espresso, cooled
1/2 tsp vanilla
6 Udi's Gluten Free Double Vanilla Muffins, cut in half 
1/2 cup heavy cream
Cocoa powder
Dark chocolate

In a large bowl, beat egg yolks and 1/2 cup of sugar until light and fluffy. Stir in mascarpone until incorporated.
In a stand mixer fitted with the whisk attachment, beat egg whites until soft peaks form. Fold in beaten egg whites into mascarpone mixture.

In a small bowl combine coffee, espresso and vanilla. Dip muffins into coffee mixture (2-3 seconds) and lay in serving cup. Spread a dollop of the mascarpone cream on top. Dust with cocoa powder. Make one more layer of muffins and the remaining mascarpone cream.

In a stand mixer fitted with the whisk attachment, beat heavy cream and 1/2 tablespoon of sugar until stiff peaks form. Spread whipped cream on top layer.

Dust with cocoa powder and garnish with grated dark chocolate. Refrigerate for at least 2 hours, preferably overnight.


















Udi's sent a great package full of their wonderful foods. So far everything has been delicious!
