Using an ice cream scoop, form the mixture into balls, smaller than a golf ball. Make 15 meatballs. <BR/><BR/>Place the meatballs on the cookie sheet and cook for 15 minutes. But that's the last half of the story. Her heart was damaged close to 40 years ago when she bested Hodgkins disease and survived to carry her youngest baby, a boy, to full term, see all of her children grown, enjoy watching her grandchildren grow up to present her great-grandchildren. My recipe is for blackened tilapia. <BR/><BR/>6 tilapia filets<BR/>1 cup wheat flour<BR/>2 tbls cajun seasoning<BR/><BR/>You have to cook this in an iron skillet over your grill or you will have a house full of smoke. <BR/><BR/>Soak the fish in milk for 30 minutes. Then mix the flour and seasoning together. Dredge the filets in the flour mixture. This will give a light coating. Pour some olive oil in iron skillet and get the skillet smoking hot. Place filets in the skillet for about 1 minute or so on each side. This should brown pretty quickly. Stir constantly until reduced to about 1/2 cup, about 5 minutes. Transfer to a large bowl and place in the refrigerator until cool. Add the pineapple. Cover and return to the refrigerator for 1 hour.<BR/><BR/>Add the cucumbers, carrots and red onions to the pineapple mixture. Toss well.<BR/><BR/>To serve, divide the salad greens among the plates. I can't wait to try that Cherry Vanilla Oatmeal!<BR/>My heart healthy recipe is <BR/>Mediterranean-style Grilled Salmon<BR/>4 tablespoons chopped fresh basil<BR/>1 tablespoon chopped fresh parsley<BR/>1 tablespoon minced garlic<BR/>2 tablespoons lemon juice<BR/>4 salmon fillets, each 5 ounces<BR/>Cracked black pepper, to taste<BR/>4 green olives, chopped<BR/>4 thin slices lemon<BR/><BR/>Prepare a hot fire in a charcoal grill, heat a gas grill or your broiler.<BR/><BR/>In a small bowl, combine the basil, parsley, minced garlic and lemon juice.<BR/><BR/>Spray the fish with cooking spray. Sprinkle with black pepper. Top each fillet with equal amounts of the basil-garlic mixture.<BR/><BR/>Place the fish herb-side down on the grill. Grill over high heat. When the edges turn white, after about 3 to 4 minutes, turn the fish over and place on a small section of household aluminum foil. Move the fish to a cooler part of the grill or reduce the heat. Grill until the fish is opaque throughout & when tested with the tip of knife and an instant-read thermometer inserted into the thickest part reads 145 F (about 4 minutes longer).<BR/><BR/>Remove the salmon and place on warmed plates. Garnish with green olives and lemon slices. This is from the Mayo Clinic and is one of our favorites. If Salmon is too pricey substitute Tilapia, it is just as good. <BR/><BR/>I have been working out and running to try to stay as healthy as I can.
