Good Morning! This will brighten your morning for sure! If you love orange flavor, this will not disappoint! The recipe comes from this kid's mini muffin cookbook I've had since my oldest was little. Since I don't make mini muffins often, I decided to try this as a loaf (this is a doubled recipe for loaf size). Yes you puree the entire orange, peel and all! I added in some chocolate and a streusel topping and it was amazing!
2 1/2 C flour
1 C sugar
3 tsp. baking powder
1 tsp. baking soda
1/4 tsp salt
1 whole orange (washed, cut into wedges, with seeds removed)
2 eggs
1 C milk
1 tsp. vanilla
1/4 C canola oil
Preheat oven to 400' and grease a loaf pan. In a large bowl combine flour, sugar, baking powder, baking soda and salt.
Puree the orange wedges (peel and all!) in a food processor (it states to have an adult help, haha). Transfer the puree to a medium bowl.
Whisk in egg, milk, vanilla and oil until blended and pour over dry ingredients. Fold in with spatula until just blended.
Pour batter into loaf pan . Bake for 30-40 minutes or until center comes out clean with a knife.

Streusel Topping:
1/3 cup sugar
1/4 cup flour
2 tablespoons butter
For topping, combine sugar and flour. Cut in butter until mixture resembles course crumbs; sprinkle over each loaf.
*I have had various inquiries about the chocolate in this recipe. It was something I had just added so I didn't write it in, but because everyone wants to know...I just melted down about 1/2 Cup chocolate chips (dark, semi-sweet or milk) and swirled them into the batter before baking.

i made this today and i dont think i used a big enough orange :( also my blender did not puree the orange that good. i was very disappointed in my blender because i puree fruits and veggies for my son all the time! but other than that it was very easy to make and my family still loved it! Thanks! I love your blog!

ReplyDeleteSorry to hear that Aimee, but glad you all enjoyed it. Perhaps if the oranges are small, use 2, and be sure sure to cut them in to small pieces so your processor can process them.
I was noticing on my processor blade, it's cracking. I use it for a lot of recipes and worry it'll break when I need it most. The thing is about 15 yr old! Time for me to get a new one too, I think. :)

I love orange in anything so I made this bread yesterday .... but without the added chocolate. The taste of orange was certainly there but I'm wondering whether it could be increased by substituting half of the milk with OJ or maybe adding a tsp. or so of orange extract, or both. I'm not much of a baker, in fact, I seldom bake so I'd like your opinion. What do you think?
