Jennifer Chandler may seem familiar if you've read my blog for a while now. I also had the chance to review her Simply Salads book. You can read that review here. Her newest book, Simply Suppers was also sent to me for review. Don't we all need simple supper recipes? I decided to make something I've been craving forever now, Pasta Carbonara. I've always been afraid to make it because of the raw egg factor, but after reading that the heat of the hot pasta actually cooks the egg mixture, its fine to eat. I have never used Pancetta before so I was excited to finally be trying it, maybe too excited? After getting home and being hungry for dinner, I started cooking...it wasn't until I was opening the package that I realized what I had done!! Now if you're reading this, you win 1,000 virtual points if you can spot the mistake I made!! Comment below with your answer, because I am ashamed to admit it, but still took photos! LOL! I went ahead and made the dish, along with some fresh homemade French Bread (that was a FAIL too, by the way! Any ideas why it came out SO dense??). Anyways, we all loved this dish.
Pasta Carbonara
For the Gremolata:
fresh flat leaf parsely
freshly grated lemon zest
minced garlic
fresh lemon juice
olive oil
salt
For the pasta:
olive oil
chopped pancetta
spaghetti pasta
eggs
Parmesan cheese
salt and pepper
crushed red pepper flakes
There are a few other recipes I have my eye on too, perhaps the Potato Chip Chicken Tenders, Creamy Garlic Chicken, Praline Bread Pudding and something else I've been wanting, a Rueben!
