Honey Lime Glazed Chicken



Here is a recipe that has been in our family before we even started one! When I became engaged, I received many things in the mail. One of which were sets of recipe cards to collect called Healthy Meals in Minutes. I had tons of them, but found I only used certain ones over and over again so I kept those and tossed all the others. This is one of them. It's been 13 years now, and being more Internet savvy, I cannot seem to find anything on these cards anywhere! I never completed my set and would love to know what I've missed. Do any of you out there recognize these cards? They have a full color picture, healthy notes and tips about that recipe. They're just great and brings back memories of our early marriage.

4 skinless boneless chicken breast halves (or pork chops too!)
Glaze-
1/4 C honey
2 tsp fresh lime juice
1 tsp dried tarragon
1 tsp cayenne pepper
1 tsp ground mustard
1/2 tsp freshly ground pepper

Preheat broiler. Line broiler pan with foil and spray with vegetable spray. Place chicken on prepared pan. Combine the glaze ingredients, mix well. Brush chicken with half of the glaze and broil 4 inches from heat for 5 minutes. Turn chicken over and brush with remaining glaze. Broil until cooked through 5-10 minutes. Keep your eye on it, it could go fast!

*wanna know a little secret? The recipe in my photo was made with thinly sliced chicken cutlets, lemon juice, parsley, and brown mustard because I did not have what they asked for on hand. I also made a double batch of the glaze. It came out just as great!

  1. I had those cards too! I think I kept one for garlic bread and one for some kind of chicken dish as well. I think I have lost even those two by now.
