My challenge was to use Rich and Creamy Melt Organic in place of other fats I use in my daily diet. So I used instead of a canola oil non stick spray or olive oil when cooking up my steam fried eggs and potatoes, one night I sauteed chicken breast pieces in it instead of olive oil for Sesame Chicken, I used it on my baked potato with grilled chicken and my favorite, I used it as a butter substitute in a Gluten Free Banana Chocolate Chip Crumb Bread. Let me tell you, even though it has a slight and I mean very slight taste of coconut, somehow it enhances the foods you're cooking in it. I really like it. Even my kids have tried it and like it. I have another one stored in the freezer, yep it's ok to freeze, just like butter is. For a store near you visit their store locator.

Entenmann’s and The Salvation Army Celebrate 75th Annual National Donut Day on June 1st: Giveaway

Entenmann’s Bakery and The Salvation Army have partnered for a sweet celebration to commemorate the 75th National Donut Day on Friday, June 1st. Started by The Salvation Army in 1938, this day honors their “Donut Lassies” who served these delicious treats to soldiers during World War I.

National Donut Day held annually on the first Friday of June, was established by The Salvation Army in 1938 to honor The Salvation Army’s “Donut Lassies” who served these treats to soldiers during World War I. This significant occasion established the donut as a long-standing symbol of the services The Salvation Army continues to provide.

In its continued support of The Salvation Army, from April 22 to June 23 Entenmann’s Bakery will donate to the organization $1 for every person who “likes” the Entenmann’s Facebook page (http://www.facebook.com/entenmanns), up to $25,000.

“We’re proud to support an organization like The Salvation Army for this special milestone,” said Maureen Sticco, Director of Entenmann’s Marketing Services. “Entenmann’s Bakery has been synonymous with fresh baked sweet goods for more than one hundred years. The 75th Annual National Donut Day is a great opportunity to share our love for donuts with all consumers.”

In the spirit of the celebration, we were sent vouchers to try out Entenmann’s for my family and some for you too. They also sent along a cute little “Donut Guy” plush toy.

· Entenmann’s Donut Facility in Carlisle, Pennsylvania is the largest Donut Plant in the United States, producing more than 40 million boxes of yummy delight each year.
· In the early ’50s, Frank Sinatra used to call the Bay Shore bakery to place weekly orders from Entenmann’s.

Salvation Army:
· The Salvation Army started National Donut Day during the Great Depression as a way to raise funds and bring awareness to The Salvation Army’s social service programs.
· With limited resources, these treats were fried, only seven at a time. The Salvation Army’s Ensign Margaret Sheldon and Adjutant Helen Purviance cleverly thought of frying donuts in soldiers’ helmets.

Simply Grilling by Jennifer Chandler: Review


I was offered to review Simply Grilling 105 Recipes for Quick and Casual Grilling by Jennifer Chandler. I said yes because I love grilling and I love her other Simply books from past reviews. Simply Grilling goes beyond burgers and hot dogs. Learn about the tools, the heat and flavors, no more guessing games on when to turn your food. Simply Grilling has 105 full color photos and recipes including grilling 101, starters, poultry, meat, seafood, salad, sandwiches, veggies and sides and even desserts. In this book Jennifer also las little tips at the bottom of the recipes for variations, suggested sides, ways to grill it and such.

As with all my recipe cookbook reviews, I try to make a couple of the recipes. I went for her Asparagus and Cherry Tomato Salad, Chicken with Mustard BBQ Sauce and Grilled Corn and Green Bean Salad. I just LOVED these salads. They are simply a veggie (grilled) mix with a salad dressing of sort. I loved them at room temp.

Other recipes I have marked to try are Caribbean Grilled Shrimp with Pineapple Salsa, Grilled Pork Loin Chops with a Dijon-Citrus Sauce, Cashew Noodle Salad with Miso-Ginger Tofu Skewers and Grilled Pineapple with Rum Caramel Sauce.

Watching the webcast, I learned a few new tips, here are some other tips to know:

- when choosing steaks, you want great marbling and a nice thin fat cap for optimum flavor
- steaks should be at room temp. for optimum grilling
- add salt no more than 2 minutes before grilling to avoid drying out the meat
- grill steaks using a meat thermometer for desired doneness: Rare 125-130' F, Medium Rare 130-135'F, Medium 135-145'F and Well 155-170'F
- flip steaks using tongs not a fork, since it will loose valuable juices when pierced
- cover steaks loosely with foil and let rest for 3-5 minutes to allow juices to distribute evenly


Chef Eric shared with us, three of his grilled recipes for Grilled Ribeye with Everglades Rub, Grilled Beefsteak Tomato with Himalayan Pink Rock Salt and Coca-Cola Balsamic Marinated Bermuda Onion. Here is the Grilled Ribeye with Everglades Rub below. My Walmart store only had a few choices of USDA steaks to choose from so I picked up some NY Strip or is it Top Loin? (top photo)the label says both actually, but they sure look good either way. My store also does not carry the Everglades seasoning so I'll just use some all purpose seasoning instead. I can't wait for dinner tonight, LOVE LOVE LOVE grilled foods.

Grilled Ribeye with Everglades Rub
serves 4

Ingredients:
4 Walmart Choice Premium T- bone Steaks

Dry Rub:
4 ounces roasted garlic paste (roast garlic in oven until golden brown and soft to mash)
4 tablespoons Everglades seasoning (found at some Walmarts)
1 teaspoon coffee, ground
1 teaspoon brown sugar
¼ teaspoon dry thyme
¼ teaspoon ground cumin
¼ teaspoon dry mustard
¼ teaspoon salt
¼ teaspoon onion powder
¼ teaspoon chili powder
¼ teaspoon cayenne pepper

Combine all dry rub ingredients. Set aside.
Rub steak with 1 ounce garlic paste on front and back. To prevent burning, do not get garlic paste on bone.
Divide dry rub seasoning for four steaks and thoroughly rub each steak and place in GLAD® food storage container in refrigerator for 3-4 hours, or longer if you prefer (up to 24 hours).
Preheat the grill using Kingsford® charcoal, until briquettes are consistently ashed over.
Remove steaks from refrigerator.
Put steaks on the grill and leave in one position on direct heat for 4 -5 minutes, rotating to get nice grill marks and even flavor profile. Follow this timeline for medium rare.

Grilled Beefsteak Tomato with Himalayan Pink Rock Salt Crust
Makes: 4 servings
Prep Time: 2 hours, 15 minutes
Cook Time: 12 minutes

INGREDIENTS
4 large vine ripe tomatoes, preferably large beefsteak
4 ounces Himalayan pink rock salt, or rock sea salt
4 ounces olive oil
INSTRUCTIONS
1. Trim off top and bottom of tomato to remove core for grilling.

2. Rub each tomato with 1 ounce oil and 1 ounce salt. Let stand in refrigerator for at least 2 hours.

3. Preheat the grill using Kingsford® charcoal, until briquets are consistently ashed over.

4. Find hot spot and grill tomato until it starts to blister on top and bottom, about 4 min. Move to medium heat and cook until tender to touch (not mushy and collapsing), about 8 minutes.

Coca-Cola© Balsamic Marinated Bermuda Onion
Makes: 4 servings
Prep Time: 5 minutes, overnight
Cook Time: 8-10 minutes

INGREDIENTS
2 jumbo red Bermuda onions
1 12-ounce can Coca-Cola©
2-3 cups hot water
1 cup balsamic vinegar

INSTRUCTIONS
1. Leave ends on onion (can trim) and cut in half. Peel away paper-like skin. Place in GLAD® food storage container.

2. Mix Coca-Cola and vinegar. Pour soda-vinegar mixture into food storage container with onion. Add as much hot water as needed to submerge onions. Marinate overnight in refrigerator.

3. Preheat the grill using Kingsford® charcoal, until briquets are consistently ashed over.

4. Remove food storage container with onion in soda-vinegar mixture from refrigerator.

5. Find nice medium heat and grill onion 20 minutes, turning occasionally. Before removing from grill, find hot spot to char onion and caramelize natural sugars for a few minutes to finish.

We've had these fun toys for a few weeks now and I can say they are still having fun with them. Even our 5 year old can set up the arrows on his own. Sadly the Air Storm Pop Rocketz didn't last us long and the handle/squeezer part came apart. But that reminds me, I think there's a rocket still on the roof from when I played with it. Every once in a while I'll hear them playing with the arrow toys on the glass sliding door, and yes even Mr.

Tribe Hummus Review


Tribe is dedicated to making delicious hummus that not only satisfies the palate, but also nourishes the soul. Tribe Hummus will always remain all natural, and the company is committed to using only the best ingredients in the most authentic way with absolutely nothing artificial. They come in a large variety of 16 flavors of topped, blended and organic but check the store nearest you for what's available.

I was able to find Tribe hummus in Roasted Garlic and Zesty Spice & Garlic flavors. I used their site for recipes to make. I came across a Crispy Hummus and Herb Crusted (cod) recipe that was really good. Of course hummus is great as a veggie and cracker dip too, so glad I found the garlic and zesty flavor for those. What a perfect little snack after my workouts.

Baked Cod with Crispy Hummus and Herb Crust
slightly adapted from Tribe Hummus

4 -6 oz cod fillets
½ cup Tribe (roasted garlic) hummus
¼ cup coarse breadcrumbs (gluten free for me)
¼ cup roughly chopped herbs (i.e: parsley, basil, dill)
extra virgin olive oil for drizzling
sea salt and black pepper

Preheat the oven to 400 degrees F.
Rinse and dry the cod fillets on paper towels.
Season with salt and pepper.
Place fish in a baking dish lined with parchment paper, skin side down.
Spread ¼ of the hummus on each fillet.
Mix together the breadcrumbs with the herbs.
Season with salt and pepper.
Pat breadcrumb mix on top of each fillet.
Drizzle with olive oil.
Bake for 20 mins.

4 Ingredients Gluten-Free Cookbook Review


I was sent a review copy of 4 Ingredients Gluten-Free More Than 400 New and Exciting Recipes Using 4 or Fewer Ingredients by internationally bestselling authors Kim McCosker and Rachael Bermingham.
This book offers more than 400 delicious recipes using 4 ingredients (or less) that work for gluten-free lifestyles. This book has a great selection to choose from including breakfast, appetizers, lunches, sides, main courses, desserts, drinks, children ideas as well baby and toddler recipes and more.

Even if your family does not have gluten intolerance, this book can serve as a healthy guidebook for getting a quick dinner on the table. Many of these recipes do not call for specific gluten free ingredients, they are naturally gluten free such as Sunshine Shrimp, Steak with Mushroom Ragout and Walnut Cake. Other recipes may include a gluten free flour blend or pancake mix (which the book does not have a recipe for). I think it would be nice if they could include one (but I doubt they are 4 ingredients worth) or reference a brand for any new gluten free-ers reading. There are two chapters in this book which confused me as to why they are in a cookbook, the All I Really Need to Know I learned In Kindergarten and the Household Tips section.
While I do enjoy a quick recipe with minimal ingredients (great time saver and makes cleaning up a breeze), the three of the four recipes I tried were not very flavorful or enjoyable. I wanted to try different recipes, mostly baking ones, since I already do my dinner gluten free and like I said many of these in the book are naturally GF, no special ingredients needed. So I made the Broccoli and Cheddar Nuggets, Energy Bars, Raspberry and Almond Cake and the Almond Pancakes.


I liked the Energy Bars, except that they soften and melt pretty quickly in your hand. I keep they wrapped and in the fridge. {dates, chunky PB, coconut, cocoa}



The Raspberry and Almond Cake was ok, it was a stange texture for me though and not real flavorful even being raspberry. It looked so beautiful going into the oven with the pink hue batter. {raspberries, eggs, sugar almond meal}


The Almond Pancakes were ok also, much like the almond cake and strange texture from the almond meal. They were thin and a dense like texture, not much flavor. {eggs, almond meal, greek yogurt, butter}




The Broccoli and Cheddar Nuggets (from the baby and toddler section) were probably the most unedible for me. I imagined them being like the broccoli cheddar poppers we used to make in the deli. Nope. I even had to add an extra egg to the mix so they'd stay together. I tried them with a little ranch, but again not flavorful. I know my kids would not have liked them (I made them as a snack for me). {broccoli, GF bread crumbs, cheddar, eggs}

Sorry, but I feel maybe more than 4 ingredients would make those recipes I tried better. Maybe I'll go back through it and look for new dinner ideas.
