Earnest Eats Superfood Blueberry Chia Cups Review

We found Earnest Eats at a little store here, my oldest bought a canister of their oats. I saw it says wheat free on it so I became intrigued and wanted to know if they had gluten free items as well, because the oats did not say they were gluten free. I contacted them wanting to be sure and they replied back saying they do carry gluten free oats and would send some! How gracious of them! I also love that they are here in San Diego.

They sent us a great little package of goodies. Inside were energy bars in delicious sounding flavors, chewy granola bars, a canister of their American Blend of oats and of course their Superfood Blueberry Chia Cups for me. Please note the only gluten free items are these Superfood Blueberry Chia Cups.

These little cups of deliciousness are just great! They have a hint of cinnamon which pairs nicely with the blueberries and other fruits you add. I loved these so much I made some up for my early morning work day and some to take for lunch later on. They held up nicely.  (and my juices ready to go too)

Superfood Blueberry Chia Overnight Oats

1 Earnest Eats Superfood Blueberry Chia Hot & Fit Cereal Cup
Fill cup with  milk (I like coconut milk) just enough to cover the grains (1/2 cup)

Cover and leave in fridge overnight. Before serving, top with fresh berries if desired.

Arthur Aguirre’s America’s Best Barbecue Cookbook Review

I cooked us up Arthur's recipe for Sausage Kabobs that uses his MLG BBQ Rub and MLG Barbecue Sauce. I added some par boiled potatoes to make this meal filling. Have you ever grilled potatoes? YUM! The rub was delicious and the bbq sauce as well, Mr. kept commenting how good it smelled as it was cooking. I think I'll be making more of this sauce again!

MLG Barbecue Sauce

1/2 cup unsalted butter
3 cloves garlic, minced
1/2 small yellow onion, chopped
1/2 green pepper, chopped
1/4 cup bourbon (use a gluten free one)
1/2 tsp Hungarian paprika
1/4 tsp red pepper flakes

1. In a saucepan on medium heat, combine the orange juice and candy. Put the lid on and cook until the candy is melted down.

2. Add remaining ingredients into the saucepan, then mix well and reduce the heat to a simmer for 15 minutes. Sauce is done when it thickens.

3. Let the sauce cool and store it in a glass jar, refrigerated, until ready to use.

There's delicious flavors in this MLG BBQ Rub!

This MLG Barbecue Sauce makes plenty to keep in the fridge for another day. I made grilled chicken thighs with some leftovers. Delish! Mr. kept raving about it. Must've been the bourbon in it.

I decided to try it more, that whole shirt was very wrinkled. I wanted to see the whole shirt wrinkle free so I sprayed it all over again and left it overnight. WOW!

Then I wanted to see it on a 100% cotton item, something that gets really wrinkled. Something I'd hate having to iron. I pulled out a nightgown and sprayed it down and again left it overnight. LOOK AT IT!! WOW! 

I am sold on this! We don't travel much otherwise I'd be packing this in my bag to spray on clothing fresh out of the suitcase. I liked it so much, that I even shared a bottle with a friend's mom who does travel.

Prep Time: 25 mins Cook Time: 5 mins Serves 4

1/4 cup olive oil
1/4 cup FRENCH’S® Classic Yellow® Mustard
2 tablespoon, chopped fresh basil
3 cloves garlic, minced
1/2 of a small, eggplant (about 3/4 pound)
1 medium, zucchini
1 large, red onion
2 large, ripe plum tomatoes
1 large, red bell pepper
8 slices Mulitgrain sandwich bread (could use gluten free bread)

1. Combine oil, mustard basil and garlic in small bowl.
2. Cut eggplant and zucchini lengthwise into 1/4-inch thick slices. Cut onion and tomatoes crosswise into 1/2-inch-thick slices. Cut red pepper lengthwise into 2-inch wide pieces; discard seeds. Place vegetables on platter. Baste with reserved mustard mixture.
3. Place vegetables on oiled rack or vegetable basket. Grill over medium-high heat 3 to 5 minutes or until vegetables are tender, basting and turning once.
4. Layer vegetables on 4 slices of bread; cover with remaining 4 slices of bread.

I love dijon so I used this in a glaze that a pork roast cooked in all day.
It came out delicious and I'll be making this again for sure!  I used a combination of recipes I found and added a few things myself.

Maple Dijon Slow Cooked Pork

1/2 C. Dijon mustard
1 TBL coarse-grain mustard
1 TBL red wine vinegar
2 tsp olive oil
1/4 cup maple syrup
3 garlic cloves, sliced
1/4 tsp pepper
1/4 tsp salt
1 tsp rosemary
1 tsp thyme

potatoes, cut
carrots, cut
onion, sliced
2 lb boneless pork roast
1/2 C. chicken broth
2 TBL white wine

Combine all the glaze ingredients, set aside. Place the potatoes and veggies in a large crock-pot, place the roast on top and pour the broth and wine over. Lastly, pour the mustard glaze over roast and veggie. Cook on low 6-8 hours.

Dole Cherry Crumble Cake & Chocolate Brownie Cherry Ice Cream #TeamDole #GetFrozen

I was to make a recipe using their frozen fruit. I knew I wanted a crumble of sort but saw this sort of coffee cake recipe instead. I decided to give it a try using Dole's Dark Sweet Cherries.

Dole Cherry Crumble Cake
adapted from Fork and Beans

Dry ingredients:
•2 c. gluten-free flour blend (in my crust post)
•3/4 c. sugar
•3 tsp baking powder
•1 tsp xanthan gum
•1/2 tsp salt
•12 oz bag Dole Dark Sweet Cherries, frozen
•zest of 1 lemon

Wet ingredients:
•1 cup milk
•1 Tb apple cider vinegar
•4 Tb oil

1.Preheat oven to 350 degrees. Grease an 8x8 pan.
2.Mix milk and vinegar together and allow to sit for 5-7 minutes to sour.
3.Combine all of the dry ingredients together (minus the cherries and zest). Whisk well. (mine came out super thick)
4.Pour oil into soured non-dairy milk and pour into dry ingredients.
5.Fold in berries and lemon zest.
6.Pour into desired pan/dish and top with pistachio cardamom sugar topping (recipe below).
7.Bake 55 minutes or until knife is clean when inserted in the middle

Almond Cardamom Sugar Topping:
•5 Tb butter, chilled
•1/3 c gluten-free flour
•1/4 c brown sugar, packed
•1/4 c sugar
•1/3 c almonds, dry roasted, unsalted, roughly chopped
•1/2 tsp ground cardamom

1.Combine sugars, flour and cardamom together.
2.Add butter until a sand-like crumble forms.
3.Add almonds.

I am sad to say MY cake did not turn out so great. I had to bake it well past an hour and even then it seemed unbaked but glued together and rubbery and tough. Oh, the woes of gluten free baking! I loved the cherries in it, so next time I'd use a favorite coffee cake recipe and add them in and use this topping too, that was good.


I have decided to give these Dole frozen cherries another chance, well a different recipe another chance. The cherries were great, the cake wasn't so. I decided to make ice cream this time! I made a spin off of Elle's Mocha Toffee Brownie Chunk Ice Cream. I'll call it Chocolate Brownie Cherry Ice Cream.

You'll want to make the espresso and brownies ahead of time. The espresso coffee is a flavor enhancer, it won't taste like coffee ice cream. For the gluten free brownies, I used the Krusteaz Gluten Free Double Chocolate Brownie Mix from Costco. Also if you have dark cocoa use it, I only had the regular so the chocolate flavor was mild. This ice cream reminds me of a black forest cake, yum!

This ice cream came out fantastic!! My  kids kept saying it's the best homemade one I've made yet! Big chunks of cherry and brownie, yum!!

Chocolate Brownie Cherry Ice Cream
Makes roughly one quart, Adapted from Ben and Jerry's & Elle

2 cups heavy cream
1 cup milk
3/4 cups sugar
1 tbsp plus 1 tsp cocoa powder (Hershey's Special Dark if you have it, I didn't)
3 tbsp espresso coffee, DIVIDED
2 eggs
1 1/4 cups (gluten free) brownie chunks (about 1/2 - 1 inch cubes)
1 1/2 cups Dole Dark Sweet Cherries, frozen, cut in half

Start by cutting the brownies into chunks. Set aside, and then cut the cherries in half. Place in the freezer to chill while you work on the ice cream.

In a medium bowl, whisk the cream, milk, sugar, cocoa and 2 tbsp of the espresso. Make sure all of the sugar is dissolved before you proceed. Whisk the eggs in a smaller bowl until light yellow in color. Pour the eggs into the cream mixture and blend well.

Transfer the mixture to your ice cream maker and follow manufacturers instructions for freezing. Just as the ice cream is finishing up it's freezing thing, add the remaining 1 tbsp of coffee, and the brownie and toffee chunks. Let those mix in, and then transfer the ice cream to a container to finish freezing.
