I was able to review this cookbook and I decided to make us the Sweet and Sour Chicken over Rice Noodles. You know me and my noodles! I was a little scared as to how the recipe would taste with the pineapple and coconut milk in it but surprisingly it was really good and my family loved it!! I wouldn't mind some right now. The chicken is cooked in the pineapple juice making it so super tender.




I also made these Pumpkin Spice Muffins. These are gluten free, egg free and could be dairy free. I added my own pecan chocolate chip crumb topping to these for a little added something. 



but nowhere in the recipe does it say when to add the milk!?? I added it in with the wet ingredients.

Finally, I made the Chocolate Pudding.

I made this late at night after work because I wanted it to be set for the next day (photos). Don;t worry it's an easy recipe and takes just minutes. It's a stove top recipe so no need to wake the family with a mixer. The only thing I have to say about this recipe is yet again, the directions are misleading. It tells me to add hot water to the hot cocoa and sugar, but in the ingredients list it only lists 1/4 cup water, divided. It does not tell me I need to use half hot water and half cold water. It could have read 2 tbl hot water, 2 tbl cold water. Anyways, this came out great and if you happen to have a dark cocoa powder, I'd use that. Mine was the regular Hershey's cocoa and I felt it needed more flavor of a dark chocolate and maybe a little more vanilla. And double this, this would never feed my family of five like it says lol.

I was sent a copy for review and I love cooking and baking with yogurt. I know how tender and moist it makes foods become so I was excited to try some new recipes. 
I used a simple greek yogurt for these recipes and decided on a meal that I could use for a few days (aka food prep: great for gluten free/diabetic eating plans). I went for the Tilapia, creamed spinach and polenta. These recipes are naturally gluten free also (be sure to use gluten free corn grits though). 

Everything was delicious, the polenta was creamy (though after day one, it changes to a firm texture), loved the spinach and the tilapia was super tender because of the yogurt.

I was sent coupons to review these John Soules Foods, however my store had a very select choice of only the fajitas and grilled chicken strips. I picked up a few bags of these to take to our weekend away camping/doing a race show at the fair. 


I brought lots of salad fixings and just tossed the grilled chicken strips on it for a quick and tasty meal. One evening I made us chicken and beef fajitas, such a simple dish and even easier with these previously cooked and seasoned, just heat and eat beef strips. 

These strips were soft and tender and flavorful for our meals. These are real slices of meat, not some pressed meat to look like slices. We enjoyed these and I love they are all gluten free! The perfect thing to bring when you've still got to cook a delicious meal on the go!

believe it or not, the peppers and onions took longer to cook up than to heat up the beef and chicken.

I was sent a nice package of Puro coffee to try. Mr. was so excited I have to say! He's the biggest coffee drinker in our home. I like to mix a little with hot cocoa to make a mocha so I don't think my review would count as well as his would since he drinks his coffee mostly black, tasting the coffee flavors more. 
I was offered whole beans or ground and went for beans and then took them to my grocery store and had them ground both coarse for the coffee press and regular ground for his coffee maker. 

Mr. really loved each of these coffee. We wish they were sold in the U.S. so we could pick some up, perhaps there is a distributor out there who'd like to help out?
