Mr. loves a good wheat bread to make chicken salad sandwiches with. 



I used Oroweat® Sandwich Thins® Rolls in 100% Whole Wheat to make our oldest's favorite sandwich. She took inspiration from Pinterest to create  Pressed Picnic Sandwiches with Pesto & Salami. (I made mine on gluten free bread and I have to say the flavors in this sandwich was wonderful!!)


Pressed Picnic Sandwiches with Pesto & Salami
serves 6

6 Oroweat® Sandwich Thins® Rolls
7 oz. Pesto
1/2 lb. Salami
6 Provolone cheese slices
2 cups Spinach leaves, washed and patted dry
plastic wrap, for wrapping sandwiches

Open the sandwich thins and spread a little pesto over the bottom piece of bread.
Top the pesto with some salami and provolone cheese.
Top with a little spinach and then place the top of the sandwich thin on top.
Press down on the sandwich with your hands and very tightly wrap them in plastic wrap.
Place the sandwich in the fridge and top with a weighted down pot. Let them sit in the fridge for a few hours if you can before serving.

Farmer John Smoked Sausage Switcheroo: Cheesy Scalloped Potatoes with Sausage and Peas #CookWithSausage


I was sent a few packages of Farmer John Cheese & Wine Flavor Smoked Sausage to share a recipe for guys who love meat and potatoes. Mr. loves sausages of all kinds cooked all ways so I used a favorite recipe with a few twists. Instead of making just scalloped potatoes as a side dish, I turned it into a sort of casserole all in one meal with a delicious cheesy wine sauce and threw in some peas for good measure. As I was browning the sausages for this recipe, they smelled incredible!!
Please note that these sausages are not gluten free, they do contain wheat. You could use a gluten free flour blend and a gluten free sausage instead if you'd still like to try your own version of this recipe. 


My family really liked this dish, Mr. loved the flavors of the sausage and the cheesy potatoes. I can see this recipe being a great hearty dinner for your hungry guy. I hope he likes it too!

Cheesy Scalloped Potatoes with Sausage and Peas
serves 8-10


2 12oz. pkgs Farmer John Cheese & Wine Flavor Smoked Sausage, sliced
4 TBL butter
4 TBL flour
4 C milk, warmed
1 tsp salt
1 tsp pepper
1 tsp garlic powder
1 tsp onion powder
4 TBL parsley, divided
1/4 C sour cream
2 TBL white wine
2 C shredded cheddar and jack cheese blend
5 C russet potatoes, sliced thinly (about 5-6 medium size potatoes)
1/2 C frozen peas

Preheat oven to 375'. Grease a 9x13 glass baking dish.
In a hot greased skillet,  cook sausages until lightly browned. Set aside.
In a saucepan, melt butter over medium heat. Mix in the flour and salt, and stir constantly with a whisk for one minute. Stir in milk. Add salt, pepper, onion powder,  garlic powder and 2 tbl. parsley. Cook until mixture just thickens. Add in sour cream and wine. Remove from heat. Stir in cheese all at once, and continue stirring until melted, about 30 to 60 seconds.
In a greased 9x13 dish, place a layer of potatoes, sausage, peas, parsley and then a layer of cheese sauce. Repeat until your ingredients are gone, ending with the cheese sauce on top.
Cover with foil and bake for 30-35 minutes. Remove foil and continue cooking another 30-35 minutes or until potatoes and tender.

    Emile Noël Artisan Sesame Oil Review: Hot and Sweet Sesame Tofu


    Huilerie Emile Noël is a fourth generation French oil mill founded in the 1920s, now offering their artisan oils in the USA. Huilerie Emile Noël offers a variety of organic, non gmo, virgin-pressed oils including: mild olive, robust olive, sesame, toasted sesame, sunflower oil, sunflower spray, pumpkin seed, hazelnut, walnut, and sweet almond.

    I chose to review their Artisan Sesame Oil since sesame oil is a big hit here. I made Hot and Sweet Sesame Tofu served up along side Chicken Garlic Scallion Noodles which I drizzled with the sesame oil before serving. At least 1 of my 3 kiddos went back for seconds, including the tofu!! I'll definitely be making this again!


    Hot and Sweet Sesame Tofu
    adapted from Honest Cooking

    1 block firm tofu
    1/4 cup cornstarch
    pinch of salt
    2 tbsp sesame seeds
    4 green onions, sliced

    For the sauce:
    3 tbsp honey
    1 tsp tamari
    1 tsp seasoned vinegar
    1 tsp sambal oelek
    1 tsp freshly grated ginger
    1 tsp freshly grated garlic
    2 tsp Emile Noël Sesame Oil
    1/4 cup oil, for shallow frying

    Mix all the ingredients for the sauce in a pan.
    Simmer on low heat until it starts to bubble up a bit. Continue to simmer for 2-3 mins and then turn off flame. If your tofu came packed in water, cut in half, drain completely pressing between kitchen towels to extract extra moisture. Cut into bite-sized cubes and dredge in the cornstarch until fully coated.

    Heat oil for shallow frying in a pan and add the tofu pieces in small batches making sure they don't overlap at all. Fry until light golden brown (a few minutes per side so it gets crispy), drain and continue until you are done with the entire batch. Drain on kitchen towels to absorb the extra oil.

    Add the fried tofu to a wide bowl and pour the sauce on top. Top off with the sesame seeds and chopped spring onions. Toss well to coat.
