Alton Brown's Basic Waffles



It's the weekend and I've posted very early for you to enjoy this! Do you go all out for breakfast on the weekend? I try to, because that's when we're not rushed to get out the door and daddy is usually home to spend it with us.

It had been a while since I've made waffles, so I wanted to get a recipe that was easier than my favorite one here, which has you whip the egg whites then incorporate them. I wanted something I could just throw in the bowl and stir up. No fuss, not today. I figured that since Alton has a pancake recipe we like, surely he's got one for waffles! I liked that these use wheat flour, something I am trying to use more of when I can. We enjoyed these with some strawberry syrup. So go have you some good breakfast this weekend!

4 3/4 ounces all-purpose flour, approximately 1 cup
4 3/4 ounces whole-wheat flour, approximately 1 cup
1/2 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
3 tablespoons sugar
3 whole eggs, beaten
2 ounces unsalted butter, melted
16 ounces buttermilk, room temperature
Vegetable spray, for waffle iron

Preheat waffle iron according to manufacturer's directions.
In a medium bowl whisk together the flours, soda, baking powder, salt, and sugar. In another bowl beat together eggs and melted butter, and then add the buttermilk. Add the wet ingredients to the dry and stir until combined. Allow to rest for 5 minutes.
Ladle the recommended amount of waffle batter onto the iron according to the manufacturer's recommendations. Close iron top and cook until the waffle is golden on both sides and is easily removed from iron. Serve immediately or keep warm in a 200 degree F oven until ready to serve.

Easy Chocolate Sauce



Quick! I needed a plan B! Plan A recipe (to be blogged) was taking too long, so I needed something to go with our vanilla bean ice cream, as I had promised the kids some already. Chocolate sauce!

I searched my trusty recipe website and found this one with ingredients I already had on hand. Going with other's suggestions I changed the original recipe. This came out FANTASTIC!! It's great for chocolate milk, ice cream, whatever dessert you would use "chocolate syrup" for.

2/3 cup unsweetened cocoa (I used Hershey's)
1 2/3 cups white sugar
1/2 cup corn syrup
1/2 cup milk
1/4 cup water
1 teaspoon vanilla extract

In a medium saucepan over medium heat, combine all ingredients except vanilla, stir well to incorporate it. Bring to a boil and let boil 1 minute. Remove from heat and stir in vanilla. Sauce will thicken as it cools. Store in refrigerator. Makes about 1 pint worth.

POM Syrup



I was recently contacted by the makers of POM, they saw my blog post about Nigella's No-Churn Pomegranate Ice Cream and wanted me to sample more of their good stuff! Sure! Who says "no thanks"? hee hee

Not long after, I received a box of 8 mini bottles of POM Wonderful 100% Pomegranate Juice. I had already visited their site and saw they have some great recipes to share. I already have my mind on a few, but made this POM Syrup late one night to have all ready and nice and thick, in the morning . Man, that is some great syrup!

Strawberry Waffles and Simple Syrup



Good Morning!
I'm still trying to use up my overstock of strawberries, that I froze for vlater uses. I decided to try them in the waffles I had previously blogged about here. All I did was fold in about 1 1/2 cups of diced strawberries into the batter. Then I made some Strawberry Mango Simple Syrup to serve drizzled over them. Mmm...

Berry Simple Syrup



2 Cups water
2 Cups sugar
1 Cup berries


In a medium saucepan combine sugar and water. Bring to a boil, stirring, until sugar has dissolved, add berries. Allow to cool. Serve over pancakes.
