We were sent a great package of SunChips products with four delicious BBQ-inspired recipes, a tote bag, tumbler, chip bowl, and a fall napkin set. Recipe cards to give them a new twist? Yes, SunChips outside of the bag and into your recipes! These chips smelled flavorful and they loved them out of the bags, though for my little one he said they were spicy.

Since these are not gluten free I let my family choose which recipe to make and they chose the Sweet & Spicy BBQ Grilled Bacon and Pepper Jack Quesadillas. For these you add the SunChips at the end of cooking time and they will soften a little so it's not like a crunchy quesadilla (ok I like chips in my tuna sandwiches, so why was I complaining?). They loved them, especially with the bacon.

I was also thinking these would be great as a crunchy coating to some baked chicken breasts with some cheese, bbq sauce drizzled over and topped with green onions.

Easy Creamy Chicken Enchiladas
Cheesy Bacon Bean Quesadillas

Mexican foods are one meal I know my family will eat without fussing. So I decided to try a new recipe for Cheesy Bacon Bean Quesadillas. I wasn't sure how they'd be, but guess what? Mr. loved them!!! They were easy to make gluten free too (using GF bacon and corn tortillas) so I could try them too. I liked them as well, the bacon was a nice taste to these.

Cheesy Bacon Bean Quesadillas

1 package (11 oz) Old El Paso® flour tortillas for burritos (8 inch)
1 cup canned Old El Paso® refried beans
2 cups shredded Mexican cheese blend
(8 oz) 1/2 lb bacon, crisply cooked, crumbled
2 scallions, chopped
Butter, melted
1 cup sour cream
1 cup Old El Paso® Thick 'n Chunky salsa

Top half of each tortilla with beans, cheese, bacon and scallions. Fold tortilla over filling; press down with back of pancake turner. Lightly brush melted butter on both sides of each filled tortilla.
Heat 12-inch nonstick skillet over medium heat. Cook 2 filled tortillas at a time 3 to 4 minutes, turning once, until golden brown and heated through. Cut into wedges. Serve with sour cream and salsa.
