Zesty Chicken Legs

I found this very simple recipe the other day, perfect for a weeknight dinner. I also did ours chicken legs, but think any cut would be great! I decided to grill ours outside, I love the grill! Oh! I also let mine marinade all day long for that boost of flavor.
We all liked this one! You'll have to excuse the photos, Mr. took my camera to work, and I had to use our oldest's little point & shoot pocket cam.



Zesty Seasoning Mix

1/4 cup garlic powder
1 Tablespoon paprika
1 Tablespoon lemon pepper
1 Tablespoon cumin
1 Tablespoon seasoning salt
oil

Mix all the spices together without oil. This is your "bulk" spice. You can use the desired amount to taste. For about 12-14 drumsticks, I like to use 3 Tablespoons of the spice. The oil to spice ration is 1 Tablespoon of spice per 1 Tablespoon of oil. Mix the spices with the oil and baste over drumsticks.

To make the drumsticks:
1 Family Pack (12-14ish) chicken drumsticks
3 Talespoons zesty seasoning spices
3 Tablespoons canola oil

After basting your drumsticks on both sides of drumsticks, place in broiler on foil-lined cookie sheet with sides, or broiler pan. Make sure they are 1-2 inches apart. Broil on high for 36 minutes, turning every 12 minutes. Let sit for a few minutes before serving.

Taco Seasoning Mix



I saw this recipe a few years ago for Taco Seasoning and finally got around to trying it. Easy peasy! Everything was already in the cupboard, so why did I keep buying those salty packets? No more I say! This was pretty good.

Taco Seasoning
1 tablespoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon dried oregano
1/2 teaspoon paprika
1 1/2 teaspoons ground cumin
1 teaspoon sea salt
1 teaspoon black pepper

In a small bowl, mix all together. Store in an airtight container.

I used all of this on 2 lbs of ground beef with a little water mixed in. Added to taco shells with all the fixings and it was a great dinner!
