Grimmway Farms Carrots


 Grimmway Farms is  a family business located in the southern San Joaquin Valley here in Ca. They are the largest grower and shipper of carrots in the world. They also produce citrus, potatoes and a variety of carrot juices. You probably know them best for their baby carrots. Did you know they also grow organic produce too? I have never seen it in stores here though.
We love carrots here, but I wanted to try a new recipe using them. I searched their website for recipes and found they have quite a selection to choose from. I went ahead and made their carrot pilaf to go with some bbq roasted chicken and fresh green beans. I loved the rice, it was easy and delicious.


Carrot Pilaf
from Grimmway Farms

1 cup carrots, shredded
1 onion, chopped
1 14.5 oz can chicken broth (low sodium/gluten free for me)
1 cup long grain rice, uncooked
1 tsp lemon pepper
1 tbsp butter
In a saucepan, saute carrots and onion in margarine until tender. Add rice and stir to coat. Stir in broth and lemon pepper.
Bring to a boil. Reduce heat. Cover and simmer for 20 minutes or until rice is tender.


These were great in my cock-pot roast we had one night also.


I also used Grimmway's grated carrots in my homemade gluten free carrot cake cupcakes for the San Diego Blogger's Bake Sale.
