Spooky Fun with the October Shop Swago Board!


Swagbucks is hosting another round of Shop Swago! What is SWAGO you ask? It's a bingo-inspired promotion run by Swagbucks, a website that rewards you with points (called SB) for completing everyday online activities. You can redeem those SB for free gift cards. If you've never used Swagbucks, participating in SWAGO is a great introduction to the site and an easy way to earn a good amount of points quickly.

Here’s what you need to know to get your 150 SB Bonus (and don’t worry, you don’t have to make a purchase to complete a pattern):

Go to the Swag page and make sure you hit “Join” otherwise you won’t get credit for completing the action items. Each square on your Swago Board will contain an action item to complete.
Once you complete the action item in a particular square the square will change color signifying the action item is complete.
You have a limited amount of time to mark off as many squares as possible so use your time wisely.
Be mindful of the patterns and their corresponding bonuses located on the right of your Swago Board. The patterns will vary in difficulty and bonus value - up to 150 SB.
Once you’ve achieved a pattern the corresponding “Submit” button will light up. You can have multiple patterns available for submission, however, you can only submit ONE pattern so choose wisely.
The game ends Friday, October 12th at 12pm PDT/3pm EDT. So make sure to hit “Submit” on the pattern you wish to submit. If you don’t hit “Submit” before the game ends you won’t receive your SB bonus.

Gumbo Love: Recipes for Gulf Coast Cooking, Entertaining, and Savoring the Good Life by Lucy Buffett, Cookbook Review!




"Life is short-eat dessert first" so I did! I was offered to review the newest cookbook from Lucy Buffett, Gumbo Love: Recipes for Gulf Coast Cooking, Entertaining, and Savoring the Good Life. Being born in Key West, I was excited to see what this was all about. Well the sweet tooth in me (even though I have been low-no sugar since Feb) went for the desserts. Being Mother's Day weekend I thought I'd treat myself. This Easy-Peasy Chocolate Sauce wasn't just easy, it was delicious! Another sweet tooth recipe that caught my eye is her Chocolate Brownie Flan. 

Incorporating Caribbean, Cajun, Cuban, Mexican, Old Florida, and Creole influences, Lucy proves through her collection of recipes that the Gulf Coast has its own distinct flavors and traditions that make it a destination year after year.

Like her brother, Jimmy Buffett, Lucy celebrates freedom, relaxation, and seaside decadence in her own art — cooking. In her new book, Lucy combines over one hundred new recipes with old favorites, including gumbos, main dishes, deep fried favorites, salads, seasonings, libations, and desserts.

General Mills Debuts New Cereals This Summer!


Peek-A-Boo! Thought I'd jump right back on here and see how things are going! Work is keeping me very busy lately so when I have some free time I may be writing another blog post.

As a blogger, General Mills likes to send out boxes of their cereal as a sort of Thank You, no strings attached. You may have seen some of my past goodies on my Instagram. Just thought I'd share them here too.

Well coming up for this summer, they have a few new varieties you may like! They contain no artificial flavors or colors from artificial sources and feature real ingredients, something they are doing to make their cereals even better.


First up would be one for me, Gluten Free! Strawberry Cheerios!! Oh yeah! I'll be hiding that one from the kids.



Then they have Tiny Toast in blueberry or strawberry flavors. How adorable are these!


For those who like a heartier cereal, they have Nature Valley Chocolate Oat Bites, Raisin Oat Clusters and as a snack idea, Maple Brown Sugar Granola.

Home & Handmade Elizabeth RoseMarie Soap Review


I was recently sent a few bars of homemade soaps from a dear lovely friend who I'd love for you to meet! Jennifer lovingly creates 100% home and handmade soap and body products. All of her products are gluten free. Her soaps would be a perfect gift for Christmas, birthdays and any special occasion! She was kind to send us scents of Surf's Up, Iced Gingerbread, Pumpkin Spice and Sunny Day.
These soaps are creamy, smell delicious and leave your skin so silky smooth and wonderful!

This is a fun festive scent called Iced Gingerbread. It really smells, well, delicious! 

They lather up well!


I had sent her my leftover kelp tablets I wasn't taking anymore and she in return sent me a bar of soap she used them in! How cool is that? This one is called Surf's Up.

Dole Cherry Crumble Cake & Chocolate Brownie Cherry Ice Cream #TeamDole #GetFrozen

I was to make a recipe using their frozen fruit. I knew I wanted a crumble of sort but saw this sort of coffee cake recipe instead. I decided to give it a try using Dole's Dark Sweet Cherries.



Dole Cherry Crumble Cake
adapted from Fork and Beans

Dry ingredients:
•2 c. gluten-free flour blend (in my crust post)
•3/4 c. sugar
•3 tsp baking powder
•1 tsp xanthan gum
•1/2 tsp salt
•12 oz bag Dole Dark Sweet Cherries, frozen
•zest of 1 lemon

Wet ingredients:
•1 cup milk
•1 Tb apple cider vinegar
•4 Tb oil

1.Preheat oven to 350 degrees. Grease an 8x8 pan.
2.Mix milk and vinegar together and allow to sit for 5-7 minutes to sour.
3.Combine all of the dry ingredients together (minus the cherries and zest). Whisk well. (mine came out super thick)
4.Pour oil into soured non-dairy milk and pour into dry ingredients.
5.Fold in berries and lemon zest.
6.Pour into desired pan/dish and top with pistachio cardamom sugar topping (recipe below).
7.Bake 55 minutes or until knife is clean when inserted in the middle

Almond Cardamom Sugar Topping:
•5 Tb butter, chilled
•1/3 c gluten-free flour
•1/4 c brown sugar, packed
•1/4 c sugar
•1/3 c almonds, dry roasted, unsalted, roughly chopped
•1/2 tsp ground cardamom

1.Combine sugars, flour and cardamom together.
2.Add butter until a sand-like crumble forms.
3.Add almonds.

I am sad to say MY cake did not turn out so great. I had to bake it well past an hour and even then it seemed unbaked but glued together and rubbery and tough. Oh, the woes of gluten free baking! I loved the cherries in it, so next time I'd use a favorite coffee cake recipe and add them in and use this topping too, that was good.


*UPDATE*


I have decided to give these Dole frozen cherries another chance, well a different recipe another chance. The cherries were great, the cake wasn't so. I decided to make ice cream this time! I made a spin off of Elle's Mocha Toffee Brownie Chunk Ice Cream. I'll call it Chocolate Brownie Cherry Ice Cream.

You'll want to make the espresso and brownies ahead of time. The espresso coffee is a flavor enhancer, it won't taste like coffee ice cream. For the gluten free brownies, I used the Krusteaz Gluten Free Double Chocolate Brownie Mix from Costco. Also if you have dark cocoa use it, I only had the regular so the chocolate flavor was mild. This ice cream reminds me of a black forest cake, yum!

This ice cream came out fantastic!! My  kids kept saying it's the best homemade one I've made yet! Big chunks of cherry and brownie, yum!!


Chocolate Brownie Cherry Ice Cream
Makes roughly one quart, Adapted from Ben and Jerry's & Elle

2 cups heavy cream
1 cup milk
3/4 cups sugar
1 tbsp plus 1 tsp cocoa powder (Hershey's Special Dark if you have it, I didn't)
3 tbsp espresso coffee, DIVIDED
2 eggs
1 1/4 cups (gluten free) brownie chunks (about 1/2 - 1 inch cubes)
1 1/2 cups Dole Dark Sweet Cherries, frozen, cut in half

Start by cutting the brownies into chunks. Set aside, and then cut the cherries in half. Place in the freezer to chill while you work on the ice cream.

In a medium bowl, whisk the cream, milk, sugar, cocoa and 2 tbsp of the espresso. Make sure all of the sugar is dissolved before you proceed. Whisk the eggs in a smaller bowl until light yellow in color. Pour the eggs into the cream mixture and blend well.

Transfer the mixture to your ice cream maker and follow manufacturers instructions for freezing. Just as the ice cream is finishing up it's freezing thing, add the remaining 1 tbsp of coffee, and the brownie and toffee chunks. Let those mix in, and then transfer the ice cream to a container to finish freezing.
