Ina Garten's Chicken with Herbed Goat Cheese



Food Network did it again! You watch that channel, and you'll be making something from it, I promise! This time it was Ina. She was doing a whole other segment on fresh herbs and previewed this chicken real quick. It looked and sounded great so I had to go and search it online. I had coupons for Chavrie to use up, so this is what I decided to make. Actually I adapted Ina's recipe a little. Such an easy recipe! I am happy to report Mr. liked this! I thought it was OK and the kids, well, they weren't crazy about it. I think it's more of an adult recipe.

Chicken with Herbed Goat Cheese
adapted from Ina Garten

5 split chicken breasts, bone-in, skin-on
2 (5.3 oz) Chavrie goat cheese cubes, with basil & roasted garlic
Fresh basil leaves
Canola oil
Kosher salt
Freshly ground black pepper

Preheat the oven to 375 degrees.
Place the chicken breasts on a baking sheet. Loosen the skin from the meat with your fingers, leaving one side attached. Cut 10 slices of the goat cheese and place 2 slices plus a large basil leaf under the skin of each chicken breast. Rub each piece with oil and sprinkle generously with salt and pepper. Bake the breasts for 35 to 40 minutes, until just cooked through. Serve hot or at room temperature.

Wow, that sounds amazing to me!! I love Ina. And I love Food Network. I wonder if the new Cooking Channel coming at the end of the month will be any good. Heck I don't even know if my service is gonna carry it yet, but I reminded myself I need to check it out!
