I love a cookbook with recipe photos, this sure has one of each on gorgeous glossy pages. As part of my review I chose to make a recipe for us all to enjoy, a nice light noodle salad. Mind you most of these recipes are for a more adult taste, you may be surprised if your little ones enjoy them too. Mine liked the noodles with the Asian dressing. Mr. and I loved this
Cold Soba Noodle Salad with Cashew Miso Dressing. In fact, he ate 3 serving of it. I even found cashew butter for the dressing and told him I could've just used peanut butter, and he said no way, and that's one flavor he caught at first taste was the cashew butter. I went ahead and made a double batch, because what is better than leftover noodle salad?
Another of her recipes I was deciding on was her Quinoa and Black Bean Lunch Bowl. It's got quinoa, black beans, zesty hummus, greens, salsa, avocado.... maybe for lunch next time. I can't wait to try her other recipes too.

Cold Soba Noodle Salad with Cashew Miso Dressing
6oz buckwheat soba noodles, cooked (I used chow mein noodles)
1/2 cup cashew miso dressing
1/2 red bell pepper, sliced thinly
1/2 yellow bell pepper, sliced thinly
1 cup english cucumber, thinly sliced into half moons
2 green onoins, chopped fine
1 tsp sesame seeds for garnish
Cashew Miso Dressing
1/3 cup rice wine vinegar
2 Tbl red miso
1 clove garlic
2 tsp chopped ginger
2 Tbl honey
3 Tbl cashew nut butter
1 tsp sesame oil
2 Tbl olive oil
