This month's Cans Get You Cooking post takes me back to a fun blogging time when I was in an online baking group. This recipe for Sweet Potato Biscuits uses Glory Foods sweet potatoes from a can. Using a canned version of sweet potatoes saved me the time of peeling, cutting and boiling them.
Back in the day I was in the baking group Tuesdays with Dorie, baking from her cookbook a couple of times a month. These Sweet Potato Biscuits are just one of her many recipes I have continued to make. You can read a little and see my photos in my post. This recipe can be found posted on Prudence Pennywise and it's for regular gluten biscuits. I just swapped the AP flour for my gluten free blend.

2 cups all-purpose flour (gluten free blend for me)
2 tablespoons light brown sugar
1 tablespoon baking powder
1 teaspoon salt
3/4 stick cold unsalted butter
2 15-ounce cans sweet potatoes
Pinch of ground cinnamon or freshly grated nutmeg (I used a little of each)...

Cut and ready to bake. I hear the closer the biscuits are to each other, they'll rise better.
This gluten free version sure didn't rise tall, but they were still delicious!
I packed these biscuits up to store in the freezer so I can just grab one, add some ham and heat up real quick for a snack at work. Delish!
