MamaBuzz Review: Reno Rose Nurf Scarf




For our MamaBuzz review, we were given the new multifunctional Reno Rose Nurf nursing cover/fashionable scarf!

So for my review, I was sent the Janelle pattern in a size Medium 4-10 size, what a fun bright color for summer! I would have loved to have this when my son was younger nursing, but probably in a bigger size. I don't like any peek a boo areas. It is very lightweight (100% polyester), cool, and fashionable. Much prettier than a little receiving blanket. You simply slip it over your head and position it over yourself and your baby. It's a hands free cover up, so you can hold your baby with one arm and their hand with the other! For this review, I let my oldest model it for me for fashion purposes. As seen on their site as well, you can wear this scarf many different ways, I particularly loved how they made a peek a boo cover for the stroller (but I wonder how they'd keep the breeze from blowing it off?). I tied it onto a purse, then looped it up for a smaller tie on. These are great ways to have that cover up ready for you and with you where ever you go. When you're not nursing, you can wear it as a fashion accessory!

Happy 3rd Blogoversary to Me! Celebrate with Sweet and Sour Chicken!



So today, 3 years ago I clicked 'Publish' for "Mommy? I'm Hungry!". What started out as just a place to have our favorite recipes online to share with others has become so much more today! I'm still enjoying every minute of it too!
So I'm not doing anything to celebrate (like I did last year) since we are packing everything up and moving down the road, how about some homemade Sweet and Sour Chicken to enjoy? I probably have at least one other recipe in here for it, but this recipe is more like the take-out goodness. The chicken has a batter layer, and the sauce once it's cooked down resembles the dipping sauce that comes with take-out. YUM!
For my family, I used 4-5 large boneless chicken breasts (thinking leftovers here!), added in a can of pineapple chunks (and added a little pineapple juice to the sauce), cut up a green and red bell pepper and an onion. I also tripled the sauce, because I had so much chicken, I just wish I cooked more of it down on the stove, that sauce is great to pour over it once done. We have lots of leftovers and tons of baked sauce (which is runnier than the stove top sauce).
I saw this posted the other day, and it comes from My Kitchen Cafe and was also shared here (there you can adapt the servings). From reading all the rave reviews, I made it that night. Oh! Another thing, start this earlier than planned, there is prep and frying time, maybe 30 minutes? We all loved it, and Mr. raved about it too! This is a keeper!

*NOTE this is a sweet sauce so feel free to use less sugar. I would probably cut out 1/4 c. of it.


Sweet and Sour Chicken
Chicken:
3-4 boneless, skinless chicken breasts
Salt and pepper
1 cup cornstarch
2 eggs, beaten
1/4 cup canola oil

Cut boneless chicken breasts into chunks. Season with salt and pepper. Dip chicken in cornstarch and then in egg. Fry in a little oil until brown but not cooked through. Place in a single layer in a baking dish. Mix sauce ingredients (below) together and pour over chicken.

Sauce:
3/4 cup sugar (or less)
4 tablespoons ketchup
1/2 cup vinegar
1 tablespoon soy sauce
1 teaspoon garlic salt

Bake for one hour at 325 degrees. Turn chicken every 15 minutes. If you like extra sauce, make another batch of sauce and bring it to a boil on the stovetop. Stir constantly and let cook over medium heat until thickened and reduced – about 6-8 minutes.

Yes, I had to make my own recipe, not easy for me, lol. Let me tell you, using this can of chicken sure made it easier to put this recipe together. It's cooked, diced and ready to go! So after some long thoughts about what I was going to create, I came up Tex Mex Swanson Chicken Wraps. I managed to spend the $10, but what I made for this, goes a long way because you only need so much of the additions in each wrap (think chips and dips for leftovers).


Tex Mex Swanson Chicken Wraps
created by myself, should make about 6 wraps + some leftovers

Chicken:
1 can of 12.5 oz. Swanson Chicken, drained
1/4 tsp. taco seasoning mix (homemade here)

Combine the chicken and taco seasoning mix and lightly toss together. Set aside. Can also be made ahead of time.


Tex Mex Sour Cream Sauce:
1/2 Cup lite sour cream
1 tsp. taco seasoning mix
2 tsp fresh lime juice
2 TBL fresh cilantro, finely diced
Combine all and set aside to let flavors come together. Can also be made ahead of time.

Pico de Gallo:
1/2 white onion, finely diced
2 cloves garlic, finely diced
2 Roma tomatoes, diced
3 TBL fresh cilantro, chopped
2 tsp. fresh lime juice

Combine all and set aside for flavors to come together. Can also be made ahead of time.

Other ingredients:
1 can corn, drained
1 can black beans, rinsed and drained
1 small can sliced olives, drained
1 avocado, diced
1 Cup shredded reduced fat Mexican cheese blend
6 Large lettuce leaves or small Whole wheat tortillas
Combine corn and black beans together.
To assemble wraps, lay down a lettuce leaf or tortilla, and add in layers using 2 TBL of each: pico de gallo, chicken, corn and beans, olives, avocado, cheese and sauce. Carefully wrap up and secure with a toothpick. Enjoy!

Through MamaBuzz, we were chosen to review sunglasses! We were able to select 3 choices and only one pair would be sent. It was kind of exciting to wonder which one we'd get! I searched and searched and honestly not being a sunglass wearing person (unless I can try them on first, and they are a simply style) it was hard for me to decide. They sure look cute and stylish with the DG logo cutouts, and I'm not into all those posh designer labels. But, I felt like they were too big for my face, I wasn't liking how they touch the tops of my cheeks, lol. The ear arms were a wide size and sort of hurt my ears. However maybe since I'm not used to wearing sunglasses it bothered me? I really do like how they look through the lenses though, a nice soft amber color. Sunglass Warehouse store has a huge selections of sunglasses and more for everyone! They have fast shipping and very reasonable prices. I recommend them for your next pair of sunglasses!

We received 2 packages of Tumaro's Low in Carbs Multi Grain Tortillas for review that had 2 -10" tortillas in each, I'm assuming it was a sample pack, because the bag said 12 ct. lol. Anyways, I used one for some leftover chicken fajita mix, and I loved how easy it was to wrap and it was plenty big enough. The tortilla was very soft and pliable and never cracked. They tasted great too!

Review: Honest Tea Half & Half





June is National Iced Tea Month and summer is here, so what a better way to start off right than with some fun facts about iced tea, courtesy of Honest Tea:
