My favorite easy dinner is taco meat and a box of velveeta mac and cheese (make per directions on box, dont use other mac and cheese) mix two together, add 3/4 cup sour cream and 3/4 cup salsa. Its yummr and I dont even like mac and cheese.

I love to make bean stews. No recipe really, just white beans, a sausage of some kind, tomatoes, pesto and grated romano. So filling for the tummy and comforting too.

I've been curious about Pizza Hut's lasagna, so this would be great!

I like shrimp (or other seafood) pasta. Cook pasta as normal . Saute onions in olive oil,
add chopped garlic, can of diced tomato(with liquid) add peeled shrimp cook several minutes. Add cooked pasta to pan mix together and serve with parm cheese on top.

Catalina CrockPot Roast
1 Roast (your choice which kind)
1 dry package onion soup mix
2 bottles catalina dressing

Mix soup mix with dressing pour half in bottom of crockpot and then place the roast in..pour the remaining mix on top of the roast. Cook on low for 6-8 hours. Easy and yummu!

WE have lots of favorites - beef stew, osso buco, speghetti. But overall it has to be a Pasta dish. Linquini with clam sauce, Spehetti salad.

2 of our easy favorites are hamburger stroganoff & creamy chicken enchiladas.

For stroganoff, heat cream of mushroom soup & sour cream with browned beef & onions. Serve with noodles, potatoes, or rice.

For enchiladas, heat cream cheese & sour cream with shredded/cubed cooked chicken then roll up in tortillas & top with enchilada sauce & shredded cheese. Bake until heated. Yummy!

I love chicken and make it way too often, but I've finally started to branch out to different flavors. Lately I love this mushroom chicken, made with mostly just sauteed mushrooms, chicken broth, chicken and parmesan. So good.

A favorite dinner of mine to make is chicken, alfredo sauce with penne noodles mixed with broccoli, carrots, peas, mushrooms, and califlower. Its a great way to get my niece to eat more veggies. Thanks for entering me this lasagna looks good and honestly I've never made lasagna so we hardly ever eat it!

Our favorite is probably an Orange Chicken - oriental style using packets for Orange Beef from Sunbird. Same preparation, but substitute chicken for the beef. Add in some vegetables and it's definitely a favorite.

I found this recipe on Fun foods on a Budget and it is for Chick pea Burgers... it is sooo delicious!
I have to share because even my hubby loves them!
Pumpkin Chickpea Burgers
1 medium onion, chopped
2 garlic cloves, minced
1 tsp oil (I skipped these first three ingredients, and just used dried minced onions and garlic to save myself a bit of effort)
1 cup great northern beans (I used chickpeas, aka garbanzos)
1/2 cup canned pure pumpkin
1/3 cup quick cooking oats (equal to one packet instant oatmeal)
1/4 tsp sage
1/4 tsp cinnamon
1/8 tsp nutmeg
Salt and pepper to taste

In a large skillet, saute onion and garlic in oil for about 5 minutes or until soft, then set aside. In a large bowl, mash beans with a fork. Be sure to mash most of the beans until a paste forms, leaving some whole beans are okay (at the end of this step my arm was very tired! I used beans cooked from dry, so they were a lot more firm than the canned variety. Just a fair warning). Add pumpkin, oats and seasonings to beans. Add onions and garlic to mixture. Mix until well combined. Allow mixture to rest in refrigerator for at least 30 minutes, the mixture can be left overnight or up to 3 days. Divide bean mixture into 4 equal balls. With hands, shape mixture into patties about 3 inches around and 1/2 inch thick. To cook patties, bake in 350 degree oven for 20-30 minutes, turning once. Or, place 1 tsp oil in large skillet over medium heat. Place patties into pan and cook for about 5 minutes. Turn patties and cook an additional 5 minutes, or until patties are browned on both sides.

I love some spaghetti noodles with some prepared pesto and a good garlic bread!! The prepared pesto can be found in the Italian aisle, with tons of different flavors!

We are hooked on Chicken Enchiladas, sometimes instead of rolling each one I layer them like a lasagna. I usually cheat and buy the Chicken preroasted at the grocery. Just shred it and you are ready to go. Makes great chicken tacos, Or I use it to make chicken pot pie, chicken and noodles, They are the best. Thanks

A quick meal is chicken, broccoli and rice. Buy a roasted chicken (store, Sam's Club, Costco) add broccoli and either soup or broth. Cook till brocoli is done and pour over rice. Easy and yummy.

We love chicken enchiladas. Add a salad or some spanish rice and you have a quick meal, especially if you use a deli roast chicken, but I try to keep some cooked and in the fridge for quick meals. I just roll the tortillas with chicken cheese and cilantro. I place them in the pan, pour over the sauce and sprinkle with cheese and more cilantro, then bake for a few minutes until hot and cheese has had time to melt and brown a little.
