POM Glazed Pork



I saw this recipe for POM glaze the other week and bookmarked it. This is what was for dinner last night. POM glazed pork. I adapted the recipe steps to better suit me. These little pork loin chops do not take long at all. Everyone loved, there were no leftovers!

7 small boneless pork loin chops
1 tablespoon olive oil
8 oz 100% Pomegranate juice
Juice and zest of 1 orange
2 cloves chopped garlic
1/2 tablespoon rosemary
3-4 tablespoons brown sugar
Salt and pepper to taste

In a small saucepan, add pomegranate juice, orange juice and zest, garlic, rosemary, brown sugar and stir to combine. Bring to a boil and let sauce reduce down a little to thicken (may take 10 minutes). Strain sauce through a fine sieve, keep warm. (I did not want all the pieces in it, just the flavors)

Heat olive oil in a skillet over medium high heat. Season pork with salt and pepper. Add pork chops and brown on both sides, about 6-8 minutes total. May add a little sauce to this while cooking. Serve pork chops immediately with a drizzle of sauce.
