Jane Doiron a mother of two boys and Author of Make Ahead Meals for Busy Moms, a cookbook she wrote to help the busy cook get ahead. By making homemade meals and freezing them or preparing them ahead of time makes getting the food to the table that much easier. She's put together 140 recipes for everything from appetizers, breakfasts, brunches, deserts, main dishes side dishes and soups. She's even mentioned some great tips in there as well!

For my review of this book, I chose to make 3 recipes. I made her Pear Bread, Chive and Onion Potato Casserole and Teriyaki Chicken.
Pear Bread: I went ahead use diced up 3-4 pear halves, because I like the chunks of fruit in my bread, especially when you can see it when sliced. I baked mine for about 1 hour instead of the 70-75 minutes as directed. This recipe makes 2 loafs of bread, so it's PEARfect (haha) for wrapping one up really well and freezing to have for another time. I liked this, the spices were just right and it stays moist.
Chive and Onion Potato Casserole: This recipe just could not get any simpler! You use a chive and onion cream cheese and mix into the mashed potatoes. Top with some cheddar and it's an easy side dish, done ahead of time! I made mine in the morning, and just reheated it later on for dinner. Everyone loved it!!
Teriyaki Chicken: I already make a teriyaki sauce, but it is a little strong in flavor, so this was really good. You add orange juice to it and it gives it a great flavor with a little sweetness. This is a great make ahead meal since you can make the sauce and marinate your chicken up to 24 hours or freeze for up to 3 months! I only marinated ours for 30 minutes. I actually doubled the sauce because we served it over rice (I have some for leftovers too). We all loved this one too, in fact I may swap this recipe out for my other one from time to time. I get to share this recipe with you all!
Teriyaki Chicken
This is one of those meals I like to keep on hand in the freezer.
1 tablespoon cornstarch
2 teaspoons water
¼ cup sugar
¼ cup light brown sugar, packed
½ cup lower sodium soy sauce
¼ cup cider vinegar
¼ cup fresh orange juice
1 teaspoon garlic powder
½ teaspoon ground ginger
8-10 skinless, boneless chicken thighs
In a gallon freezer bag, combine all of the ingredients except the chicken. Mix thoroughly. Add the chicken and seal. Refrigerate up to 24 hours before cooking or freeze in a labeled freezer bag up to 3 months.
~Cooking Directions~
Remove the chicken from the refrigerator 30 minutes before cooking. Preheat the oven to 350°F. Place the chicken and all of the liquid in a 9 x 13 x 2-inch baking dish (uncovered). Bake for 30 minutes, turn the pieces over, and bake for 30 more minutes. Serves 4 – 5

BTW - that Teryiaki Chicken recipe seems so easy....going to try it soon and see if the boys will eat it! they aren't eating anything these days!
