Last night for dinner I made the Cheesy Rice and Ham (with broccoli florets) by Robin Arnold of Fort Worth, Tx on page136. It's an easy casserole using cook rice, diced ham, shredded cheese, warmed milk and eggs, then I threw in some veggies for good measure. It was perfect for our busy night, quick to make and best of all it was good. It reminded us of another casserole I make that is similar.

we have alot of family get togethers during Christmas. What makes it easier is to have the meals potluck style. We usually designate certain people to bring certain items. It's always great and we eat way too much!!

I prep what I can the day before. Also, my mom helps me a lot by cooking the turkey. :)

To make things a little easier, I make the longer cooking items ahead of time and freeze them. Potatoes and butternut squash get boiled and mashed and put into recloseable bags. I also parbake rolls and breads and freeze them.

Do not hesitate to make the meal a potluck! Stick to the basics and remember that healthy alternatives are appreciated. Loaded potato recipes can contain the calories normally apportioned to an entire meal. Consider using some broth vs heavy cream.

I let my MIL cook whatever she wants, then I fill in the gaps--that way she gets to feel like she is running the show and I have less work!!! :)
