This book is huge! I have so many pages marked of delicious sounding recipes. For my review I made a few of the recipes, for dinner and dessert.

Chicken Enchilada Bake Recipe
This is a Top 100 Recipe in the book. I did make my verde sauce from scratch so I knew it would be gluten free. I also roasted off a whole chicken and shredded it up. This is simply a layered enchilada bake. It was delicious, even Mr. had seconds. I also made some homemade gluten free cornbread (to be blogged).

Kielbasa Cabbage Skillet Recipe
This was a new to us recipe, we love kielbasa and cabbage anyways. The sauce is a tangy, lightly sweetened tomato base. I put less sugar than called for, and even Mr. thought it was a little sweet, but still good. Sadly, the kids weren't crazy about it, must be a adult taste kind of recipe.

Baked Apple Slices: for these, I just did them in a skillet, quicker and easier I think. They were delicious over vanilla bean ice cream. I could sure go for some now.
