Southern Living Complete Quick & Easy Cookbook Giveaway & Review

Southern Living Complete Quick & Easy Cookbook, is perfect for busy moms. In this book, you'll find 600 fast and fresh dishes, many of which can be made in 30, 20, or even 10 minutes or less, start to finish -- such as Sausage-Shrimp Gumbo Soup, Garlic Fried Chicken Breasts, and Broccoli Cornbread Mini-Muffins. Recipes are rigorously tested by the Southern Living Test Kitchen for convenience and variety. Enjoy quick and easy classics such as Chicken Parmesan, with a crispy crust topped with melted cheese, that you can have on the table in only 24 minutes; Tortellini Carbonara, a one-dish meal with a 5-minute prep time that dirties only one pan; and Apple Shortbread Crisp, with apples baked beneath a buttery shortbread cookie topping, that takes just 7 minutes to prepare.

This book has so many wonderful recipes to choose from. I have many pages marked to make such as Thai Coconut Shrimp and Rice that can go in the slow cooker. Then there's a Honey BBQ Chicken with a wonderful sounding Honey BBQ Sauce recipe I'd like to try in place of our regular homemade sauce. They've also got an Avocado Corn Salsa I'd love to try right now. These recipes are easy and have tome saving tips along with 250 photos of recipes.

Pecan Chicken, page 17
This was a nice to change for our regular chicken dinner. I would have liked if the crust actually stayed ON the chicken better. Be sure the nuts are made in gluten free facility and this is naturally a GF dish.

beef lombardi
Beef Lombardi, page 67 {my servings were gluten free pasta}
 I made my servings with gluten free pasta and their's regular. I found the sauce to be really thick even after cooking it for less time than the recipe called for. It was really good though.

ginger grilled pineapple & ice cream
Ginger Grilled Pineapple with Vanilla Bean Ice Cream, page 405
This dessert was fantastic! We love fresh pineapple and grilling it make it even better! The warm pineapple melts the ice cream a little making it sauce like for the bits of pineapple. YUM!

CollPBJmuffins
Peanut Butter Bread made as muffins, page 362 {filled with strawberry jam}
I thought the kiddos would love these for after school, sort of like a PB&J. I hollowed out the centers with an apple corer then added a little warmed jam.
