Macadamia Nut Cookies



1 cup butter, softened
1 1/2 cups white sugar
2 eggs
2 teaspoons vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt (or less if nuts are salted)
12 oz bag white chocolate chips
8 oz bag chopped macadamia nuts
1 Cup lightly toasted coconut

In a medium bowl, cream together the butter and sugar. Stir in the egg and vanilla. Sift the flour, baking soda and salt, stir into the creamed mixture. Finally, stir in the coconut, white chocolate and nuts. Chill for 1/2 hour. Drop cookies by heaping tablespoonfuls onto an lined cookie sheet, about 2 inches apart.
Bake for 8 to 10 minutes at 325', until lightly browned. Cool on wire racks. When cool, store in an airtight container.

is there anything more tasty than toasted coconut? sometimes i'm pretty sure there isn't, and then i eat a fresh, hot cinnamon roll or slab of apple pie a la mode and change my mind...again.
