Kelly of Baking with the Boys selected Dorie's Fresh Mango Bread for this week's TWD recipe. Mangos have become a favorite around here since my oldest was little. Auntie Penny (Hi Penny!) turned her onto them. I never cared for them before, and only the past couple years have I become fond of them. Now is it mangos or mangoes? Today I will call them mangos. The first time I ever bought one, I had to look up how to cut them. Good old YouTube helped. Take a look at all the Mango recipes I've blogged about here.
For Dorie's bread, it took me 3 mangos to get the 2 Cups needed, I did cut them into bigger chunks though. I like having a piece of fruit in a bite of bread. I also used 1/2 tsp. each of ginger and cinnamon, much less than called for. Instead of using the zest of 1/2 a lime, I used the whole thing and I also omitted the raisins.
The flavors came out perfect, I think. The bread is to be wrapped up, and the next day it will become so moist, so moist you have to be careful picking up a slice! We all loved it, and will add to my regular recipes!
Over at the TWD group we have a post where we can get P&Q about that week's recipe. A few of us had "hairy" bread, meaning fiberous mangos. I read that it was from over ripe mangos. One of mine was kinda mushy, and the other 2 were not. When choosing a mango, I look for mostly red-orange skin and ones that are a little soft.

Wow, does this look yummy! I tried hard to dice my mango but it's such a slithery creature, it didn't exactly end up diced. I bet the big chunks were wonderful in your bread.
Supper yummy. It took me 2 1/2 mangos to get enough...I wonder where Dorie gets her one mango...it must be huge! :)
