I was a little curious as to what my kids would think of these. SO, I sort of didn't tell them exactly what flavors there were. Though they love broccoli and sweet potatoes I wanted to see if they'd be able to taste it. Guess they had no clue! Since I wasn't able to taste these (they have wheat in them) I did smell them and boy do those Lemon Broccoli snacks smell like a lemon cooler cookie! The Sweet Potato Oatmeal Raisin snacks were like a spice cookie. They loved them!

What an adorable story for your children. My two little ones loved listening to it over and over again with the CD, made for a pleasant drive through the mountains one day. The illustrations are beautiful and the story is sweet. It lets them feel how special they are by telling a story. This would make a delightful gift for a baby shower, birthday or Holiday for someone dear to you.

Parents, Your Treat for Back-to-School: Frito-Lay‏ Giveaway


Frito-Lay knows how busy us school Parents can be and that's why they want to let you know they care. They want couples to set aside some "we time" and just relax a bit, have your favorite drink and munch on some snacks.

We munched on Lay’s Kettle Cooked in Reduced Fat Sun-dried Tomato & Parmesan and another day the Original flavor. But wait, I have to tell you this first. This came to our door shortly before I left to get the kids from school, so I hurried and opened the box and started to set it all up for a photo once I got home. WELL, while I was gone, MR. helped himself to a bowl of those chips!! ha! He didn't even wait for me. So then I had to photograph the crumbs in the bottom of the bag. lol. They were delicious, and I had ice water in my cute chalk mug.

SUBWAY Fresh Fit Tuscan Chicken Melt: $25 Giveaway & Review


 
SUBWAY® restaurants has added a new limited-time offer to their FRESH FIT™ menu during the month of October, Tuscan Chicken Melt! Featuring seasoned chicken strips, melted cheese and a tangy balsamic vinaigrette dressing, the Tuscan Chicken Melt. With about 380 calories and 8 grams of fat per sandwich (depending on which cheese/bread you get, right?) is proof that, good-for-you can also taste delicious.

 
I took Mr. out for his lunch one afternoon and while I did not eat there, I brought the Tuscan Melt home to share with hungry mouths after school. Right now it's a $6 footlong special. I ordered it on Italian loaf with lettuce, tomatoes and red onion with provolone. Half of this did not make it that long, Mr. dug right in! He loved it. I can tell you how amazing it smelt though, yum! Balsamic vinaigrette has become a fave of mine lately. I tried to make it as photogenic as possible, hard to do when it has a drive home all wrapped up stuffed into a bag lol.

Here is a recipe inspired by a lasagna I recently made, for stuffed shells. I made my portions gluten free, being sure the sausage was gluten free, this Classico Seasonal Selections Creamy Spinach & Parmesan sauce is already gluten free and I used Tinkyada pasta shells. I'm glad I grated the zucchini up, and the spinach wilted down to about nothing. There are picky green eaters in my family, and I didn't hear one whine, so yay me!



Spinach and Chicken Sausage Stuffed Shells

2 TBL olive oil
1 pound mild Italian chicken sausage links, casings removed
2 garlic cloves, minced
1 small yellow onion, grated
1 small zucchini, grated
2 cups fresh spinach, torn
2 TBL fresh basil, cut
1/4 tsp pepper
1/4 tsp salt
1 1/2 cups lowfat cottage cheese
1 egg, beaten
1/2 cup grated parmesan cheese
1 TBL dried parsley
8 ounces shredded mozzarella cheese
25-28 large pasta shells (or gluten free pasta)
1 jar Classico Seasonal Selections Creamy Spinach and Parmesan sauce

Cook pasta according to package. Prepare a baking dish with nonstick spray, and place a large spoonful of Classico sauce in the bottom of the dish. Heat oven to 350'.

In a large skillet over medium-high heat, heat 2 TBL olive oil. Add chicken sausage, onion, garlic, pepper and salt. Allow to cook until sausage is almost done, being chicken it cooks quickly. Add in zucchini and spinach and cook until spinach is wilted. Season with pepper and fresh basil, remove from heat.

In a small bowl, combine the cottage cheese, egg, parmesan and parsley.
Spoon about 2 TBL of sausage mixture into each cooked pasta shell, add a small spoonful of cottage cheese mixture and top with a little sauce over each. Sprinkle with mozzarella. (I also used an Italian seasoning over mine).
Bake covered at 350' for 30 minutes.

I was sent this wonderful lunch set for review. My kiddos already have their lunch bags for school so someday soon when Mommy gets to go back to work (yeah I know), I'll have my lunch bag too. For now I've been using it when we go to the race track, being gluten free means I get to bring my own foods while the rest of the family eats sub sandwiches I make. So I have been packing huge salads, enough for my lunch and dinner and I load it up with everything you'd find from a salad bar. This one has salad mix, shredded carrots, cherry toms, chickpeas, red onions, cucumbers, beets, boiled eggs and fat free thousand island dressing. This bag is pretty big and it all fits inside.

These are the cutest containers ever! No wonder they won an award for that. We all had a nice after school treat when these arrived at our door. Of course we tried a scoop of each (ok I only tried three flavors). My fave was the Sneaky Pash, of wildberry and chocolate flakes. My oldest loves mango but I think her fave was the Naughty honeycomb and caramel chunks. My youngest ones just liked them all, lol. Anyway, these were really good, and as a now healthier nut that I am, I liked that these are guilt free.

I don't know if you can clearly see the list:
The Naughty Pash, Honeycomb & Caramel Chunks says under the allergens that it may contain traces of egg, wheat and soy. As a Celiac you can not trust that that it is 100% GF. Any little bit of wheat/soy gluten trace/cross contamination will affect you.

I decided to make an after school treat, delicate ice cream sandwiches. I used a candy bar ice cream, softened a little (or the crisps will break), and chocolate and caramel crisps. I then froze them to harden the ice cream back up a little. They loved these!
