Cans Get You Cooking Review: Lasagna

This month's Cans Get You Cooking post is using S&W Premium Tomatoes. According to a University of California, Davis study, many canned fruits and vegetables have the same nutrients as their fresh or frozen counterparts. Tomatoes are one that's great to use canned. They are used in many recipes so it's great to keep your pantry stocked with them. I use many different styles of canned tomatoes for my sauces. I love them diced, pureed, sauce, paste, fire roasted... I like to keep them on hand because it's so easy to whip up spaghetti sauce.

This month I used S&W Ready-Cut Italian Recipe Tomatoes to make our favorite lasagna. I used the Italian recipe since it had some of the delicious flavors already in it, giving this dish more oomph. I usually make this in gluten free pasta shells for myself (they get regular pasta), but I went the extra mile and even made my own gluten free pasta sheets! I'm telling ya! Once you make homemade pasta, boxed stuff just isn't the same. I linked below to the recipe I've been trying out. 

 I made this the day before and brought it up to my kid's racing events (it's an all day event so I like to bring our own foods, see a photo of them below). This was a nice change from the normal sub sandwiches I make. We just cut, reheated and ate it up. Check out the adapted ingredients below then click through to follow PW's directions. 


my homemade gluten free pasta lasagna piece

PW's Best Lasagna Ever
slightly adapted from The Pioneer Woman

1 1/2 pound Ground Beef
1 pound Mild Ground Breakfast Sausage 
Salt and Pepper to taste
1 Small Onion, diced
2 cloves Garlic, Minced
3 cans (14.5 oz ea) S&W Ready-Cut Italian Recipe Tomatoes, undrained
12 Ounces Tomato Paste
2 Tablespoons Dried Parsley
4 Tablespoons Fresh Basil, divided
1 teaspoon Salt
3 cups Lowfat Cottage Cheese
2 whole Beaten Eggs
1/2 cup Grated (shaker can) Parmesan Cheese
2 Tablespoons Dried Parsley
1 teaspoon Salt
1/4 teaspoon Pepper
1 pound Shredded Mozzarella Cheese
1 package (10 Ounce) Lasagna Noodles (or gluten free pasta here)

For lasagna directions, click here. I pretty much followed PW's directions, browned meats with S&P and onion, drained them and added fresh basil to all components. I made a small dish with gluten free pasta and a 9x13 of regular, just thinner layers.
