This is a family favorite I grew up with, served alongside pork chops with applesauce.
2 15 oz cans black beans, rinsed and drained
1 Tbl minced garlic
2 bay leafs
1/2 onion, diced
1/8 tsp salt
1/8 tsp pepper
water
2 Mahatma Saffron Yellow Rice packages, cooked as directed
Place all in a small sauce pan, cover with water. Bring to boil, let liquid reduce down, adding more water as it reduces, and keep simmering for 1 hr. Remove bay leafs. Will end being a little thick. Serve over rice.

My Dad makes this but adds chopped white onions, thick chunky salsa and shrimp. So good! You ought to try it.
