Mom's Fudge Brownies



These are my #1 brownie recipe.

3/4 Cup Unsweetened cocoa (can also use Dutch cocoa )
1/2 tsp. baking soda
2/3 Cup vegetable oil, divided
2 Cups granulated sugar
2 eggs
1/2 Cup boiling water
1 tsp. vanilla
1 1/3 Cup flour
1/4 tsp. salt

Mix cocoa, and baking soda in a mixer on low speed. Add half of the oil, mix. Add boiling water and mix on low until it becomes thick. Add in sugar, eggs, vanilla and the last of the oil, Mix until smooth. Sift the flour and salt together, add to the wet ingredients. Mix well. Pour into a greased 9x13 baking pan and bake at 350' for 30 minutes or until a toothpick comes out clean.

~I claim these to be my mom's "recipe" because these I grew up on, and my copy is hand written. I have since found the exact recipe online but am not sure of the original author.

~my side note:
For my bake sale, I made mine in a foil lined 8x8 square pan and bake at 325' for 40-50 minutes or until a toothpick came out clean. After they've cooled, remove from pan with foil, and cut. These gave me 9 thick brownies which I dusted with powdered sugar.

-Try them with a ganache topping too! So so so good! I think these were my fave.



-Another variation of this recipe I am baking right now is for a single recipe in a 9x13 pan, and to clean out some overstock. I used 1/3 C. almond meal in place of 1/3 C. flour, sprinkled in some chopped pecans, chocolate chips, chopped chocolate almond bar, chopped heath toffee bar, and call these loaded brownies!

those look incredibly dangerous. only because i'd start eating one and realize an hour later that the entire pan is gone.

I've had a similar recipe for years. The only difference is yours has vegetable oil and mine uses butter. The unique thing about this recipe is the boiling water which I assume is added to make sure the cocoa powder dissolves.

I don't remember where my recipe came from either, but this is by far the best brownie recipe I've ever had.

I appreciate that you posted your recipe even though mine is nearly the same because there is a butter shortage in Japan now (where I currently live) and I can't make my version! It's nice to know it's just as tasty with vegetable oil. Thanks!

Quick question, (beautiful brownies btw) but what type of Cocoa did you use for the recipe? Unsweetened I assume? Dutch-process?

gm, I used Unsweetened Cocoa for this recipe. I will add that in now.
However, I have used Dutch as well and they have been fine.

hi. i just made your moms fudge brownie.i messed up the mixing of the dry ingredients. i mix both the cocoa powder and flour together.At the end of the mixing i added an additional 1/2 cup of water when i found the batter too thick.I lick some loose crumbs and its yummy. cant wait to cut and eat the whole brownie.yum yum. i also baked an apple cake using 10apples from another blog. i was suspicious if it will turn out well, but it looks good. yum yum. I have a big oven and i baked both cakes together. thanks

I made these tonight. Used an 8x8 glass squar pan for 9 thick big brownies just like Rachelle did for her bake sale. I Added chocolate chips and baked for 40-50 min as instruced (for an 8x8 pan) but had to leave them in an extra 10 minutes otherwise they would've been too doughy. These were so good Ive been looking for a perfect brownie recipe for so long and now i finally found it thankyou so much Rachelle !
