This is super simple, who hasn't made egg salad before? Well, if not, I know someone out there is looking for an egg salad sandwich recipe, perhaps a younger one wanting to learn to make things in the kitchen or a student out on their own for the first time, or a newlywed trying to impress their significant other? Well this isn't anything fancy, but it's good! This is a really easy simple recipe, it's how I like mine. I don't use measurements but I'll guesstimate it for you.
Egg Salad
1 dozen hard boiled eggs* (how to below)
1/4 C mayo
1 Tbl mustard
1 Tbl sour cream
2 Tbl milk
salt
pepper
parsley (optional)
sliced bread (I used this whole wheat)
Separate the hard boiled eggs* from the yolks and white part in 2 different bowls. Using a potato smasher (easiest way for me) or chop them up with a knife, breaking up the egg whites until they are small pieces. Do the same for the egg yolks in another bowl. Add the wet ingredients to the yolks and continue to mash (or stir with a spoon) to combine all, adding more mayo or milk if needed until desired consistency. Season with salt and pepper to taste. Combine the egg whites to the egg yolk mixture, and gently combine. Spread on your favorite sandwich bread.

YUM! Love egg salad, deviled eggs AND whole wheat bread! Nothin' beats homemade bread. Everything looks great.
Mmmmmmmmm. Now I know what to do with all those hard boiled colored easter eggs I can't get my kids to touch! Thanks. Also, I so needed the how to boil an egg feature also. Every year I over boil these puppies and next year, thanks to you, will be different!
I use a masher for my egg salad too - best tool!
