How cute! :)


This Potato Tortilla (pg. 53) cooks to perfection on the stove top and finishes under the broiler. Such a simple recipe with just potatoes, onions, eggs, salt & pepper as well as olive oil. Try it with a little Verde Sauce below.


The Verde Sauce (pg. 59) has wonderful flavors from fresh ingredients such as:
cilantro, mint, green onions, jalapeno, garlic, lime zest & juice, honey, salt and olive oil. Pairs perfectly with the pork roast and potato tortilla.


I used their seasoning recipe for the Whole Beef Tenderloin (pg. 59) for a pork roast. Everything was so wonderful together and I am thinking the leftover potato tortilla would be great for breakfast leftovers.

I couldn't decide on just 1 thing i like. Starting with the cookbook, yum on I just had lunch and the dishes made me hungry again. Next the dragonfly plaque, and the Beight happy cookie jar
