Musselman’s Apple Sauce “Replacement Resolution!” Giveaway and Review



Working out, daily if possible, has been my routine for 14 months now. I guess I can feel blessed to have been diagnosed Type 2 Diabetic because it has changed my life for the better. Since February 2012 I have lost 50 lbs just from simple daily exercise (walking/jogging) and eating healthier. Musselman’s Apple Sauce “Replacement Resolution!” helps me choose a healthier snack to keep me going in between meals and to stay focused on my eating habits.


All you have to do is replace the junky snacks with a cup of their applesauce for your snack. Applesauce is one of my go to snacks and Musselman's single serving cups are perfect for the portion control and taking with you on the go. I also like to replace the oil in some baking recipes with applesauce, it will make it more moist and have less calories. Check out the baking tips here.

Here are some Zucchini Muffins I made using applesauce, they came out wonderful and my kiddos enjoyed them. There was no taste of applesauce either so they were like regular muffins, but gluten free so I can eat one too.


Gluten-Free Zucchini Muffins 
adapted from Gluten Free Homemaker
Makes 8 regular size muffins

1/2 c. brown rice flour
1/2 c. sorghum flour
1/4 c. potato starch
1/4 c. tapioca starch
7 TBL sugar
1 tsp. xanthan gum
1/2 tsp. cinnamon
1/2 tsp. salt
1/2 tsp. baking soda
1/2 tsp. baking powder
1/3 c. applesauce
2 eggs
2 TBL milk
1 tsp. vanilla
1 c. shredded zucchini
1/4 c. chopped nuts

Combine the dry ingredients in a mixing bowl. Make a well in the center. Add the oil, eggs, milk, and vanilla. Stir with a fork to mix well. Stir in the zucchini and nuts. Spoon into a greased muffin tin and 1 tsp. crumb topping* and bake at 400' for 15-18 minutes. Remove from oven, allow to cool on cooling racks.

Crumb Topping, if desired
1/3 C granulated sugar
1/4 C flour
 2 TBL butter

Combine sugar, flour, cut in butter until resembles coarse crumbs. Add 1/2 TBL to each muffin when ready. (you may have some crumb topping leftover, freeze it for a later use)

I replace all sugary drinks with plain water or unsweetened iced tea for my healthy replacement resolution!
