Country Crock Casserole Club Giveaway and Review: Cheesy Italian, Bacon and Broccoli Mac & Cheese

Casseroles are great for busy nights or for lunches as in our case today. They're great because you can have your pasta, meat, veggie and a sauce all in one bowl. I grew up eating casseroles, and I always liked adding a slice of buttered bread over mine to get all nice and warm and melty.

As a new member of the Country Crock Casserole Club I was invited to create my own casserole recipe using their kit they provided to me as inspiration. Throughout the next few months I will be sharing a new recipe with you and giving you the chance to win a kit or coupons for yourself!


Today I made my kiddos a macaroni and cheese recipe using some of their favorite ingredients such as broccoli and bacon and gooey cheese. We're in the middle of our move so this was nice to prep everything and throw it in the oven to finish as I packed up a few more boxes. This recipe is not gluten free but could easily be adapted using gluten free pasta, bacon and be sure to check that the cheese is GF also.

Cheesy Italian, Bacon and Broccoli Mac & Cheese

4 Tbsp. Country Crock® Spread, melted, divided
1 cup 2% milk
8 ounces dry rotini pasta
12 ounces diced cooked bacon
1 1/2 cups fresh broccoli
2 cups shredded Italian cheese blends
Pinch of nutmeg
Salt and pepper to taste
1/4 cup plain dry bread crumbs
1 TBL. grated Parmesan cheese
1 TBL. dried parsley

Preheat oven to 350°.
Cook pasta according to package, but add in the broccoli during the last 7 minutes. Drain.
Combine 3 tablespoons Country Crock® Spread, milk, rotini, broccoli, bacon, Italian cheeses, nutmeg, salt and pepper in a sprayed 8-inch baking dish. (I separated mine in an 8x8 and a smaller dish)
Combine bread crumbs, Parmesan cheese, parsley and remaining Spread in small bowl; sprinkle over top of casserole.
Bake uncovered until heated through and crumbs are toasted, 20 minutes.
