When I was first asked to create a special recipe using KC Masterpiece Original sauce, I knew it would be something with a sweet kick and of course grilled outside! I had a few ideas running in my mind but decided the quickest, easiest and most favorable would be shrimp. I chose to do a mango chipotle flavor with the bbq sauce. These came out wonderful! You'll get hints of sweetness from the mango, a little smoky kick from the chipotle and savoriness from the bbq sauce and of course the flavor from grilling. This recipe is fast, delicious and will have everyone wanting seconds.
KC Masterpiece Original sauce is gluten free!
Chipotle Mango BBQ Shrimp
3/4 Cup KC Masterpiece Original sauce
1 tsp. chipotle/adobo sauce
1 TBSP chopped garlic
1/2 Cup mango chunks, frozen, thawed
2 lbs. shrimp, peeled, deveined
In a small bowl, combine the KC Masterpiece Original sauce, chipotle/adobo sauce and garlic. In another bowl mash up the mango with a fork until it's a puree texture, add to bbq sauce mixture and mix well.
Skewer shrimp and on a medium heat, grill about 3 minutes per side. Once you flip the first side, brush with bbq sauce. Once shrimp is finished, remove from grill. Serve with additional sauce if desired.
