Mango Ricotta Muffins



I had some ricotta and frozen mangoes to use up, so what did I do? I used the Food Blog Search button to the right there to help me find something good to bake. I came across these Mixed Berry Ricotta Cakes from Baking Bites. Easy, simple and I had everything needed. I just used some leftover mangoes I had diced and froze from an earlier recipe. I also looked up a streusel topping, since I love a muffin with a crumbly topping. These turned out fabulous! Delicate and moist. You can use any frozen berry or fruit too. Definitely a keeper!
*Let me tell you though, the streusel topping will dissolve some by the next day, being sugar and all. But these are still yummy!

You've got me stopped dead in my tracks here. The combination of mango and riccota is just sensational! I will definitely try these. They look soooo moist and the chunks of fruit in the middle is an extra special surprise! Gotta go get some mangoes now. Thank you!
