I know I have a few recipes here for pancakes, but those were from before I found this recipe. THIS is my #1 favorite go-to pancake recipe for good now, and my #2 recipe are these. These are a basic pancake that come out nice and fluffy, how I like them. You can use with regular whole milk or buttermilk, I've used both and it's been fine. I like to double this so I can freeze any extras for during the week. Weekends are my big breakfast times, when Mr. is home and we've got no where to hurry off to. I've used this recipe for a while now (ok Aug. '09) and on my copy I don't have where I got it from. So trusty Google answered it for me, all I did was search -fluffy pancakes with a fork if you're so inclined- and it brought it up! I can't believe they haven't been blogged yet! Give these a try and let me know how you like them. I changed my ingredients just a little.
1 1/2 c flour 3 1/2 tsp baking powder 1 tsp salt 3 Tbls sugar 1 1/4 c milk or buttermilk, warmed slightly in the microwave (just to make sure it doesn't solidify the melted butter) 1 egg, room temp 1 tsp vanilla 3 Tbls butter, melted
Sift together the flour, powder, salt and sugar twice. Make a well in the center and set aside.
In a separate bowl, whisk together (with a fork, if you're so inclined!) the remaining ingredients, then pour into the dry ingredients. Whisk briefly, being careful not to overwork the batter. (I do 10 strokes)
Pour (I use a 1/4 C measuring) into a HOT oiled skillet over medium-high heat. Before flipping you can sprinkle them with blueberries, raspberries, chopped strawberries, sliced bananas, nuts.... Anything's good!
A simple, easy dinner was in order this night. Doesn't everyone like tomato soup and grilled cheese?
I have made a tomato soup Roasted Garlic and Herb Focaccia Sticksfrom scratch before, but I wanted to try this one too. After reading some reviews on it, I adapted it to our liking, I also changed the amount it feeds (to 6) there on the site since it figures it all out for you. I used my immersion blender and blended for a good 5 minutes so it was creamy texture. I tried a little in the regular blender, but it still almost blew up (too hot!). I didn't want the half & half to overpower the tomato flavor and beautiful red color, so I only added in a little.
Anyways, I thought this was fabulous! Everyone ate it (well my 7 yr old didn't like the smell of the fresh basil plant, so she was being picky about that). This is a tangy tomato soup, so you could add a little more sugar to cut the acid in it. In fact, I liked this recipe better than the other one I posted about. I picked up an olive loaf of bread and made grilled cheese sandwiches with that. I topped the soup with some broken pieces of Roasted Garlic and Herb Focaccia Sticks.
Creamy Tomato Basil Soup
adapted from allrecipes(go to site to customize serving amounts)
4 fresh roma or on the vine tomatoes - seeded and diced 4 cups tomato juice
2 cloves garlic 14 leaves fresh basil 1/2 cup half & half 1/4 cup butter
pinch of sugar salt and pepper to taste
Place tomatoes and juice in a stock pot over medium heat. Simmer for 2 hours. Puree (I used my immersion blender, be extra careful if you use a regular blender!) the tomato mixture along with the basil leaves, in the stock pot. Keep the pot over low heat, and stir in the heavy cream and butter. Season with salt and pepper. Heat, stirring until the butter is melted. Do not boil.
Place both slices of bread (per sandwich), buttered side down, on a hot griddle or pan. Add cheeses, let the cheeses melt and the bread turn golden (griddle like an open face sandwich). Then flip the top slice onto the bottom slice. Serve hot.

Many years ago, I received a Betty Crocker recipe card set. This is one of the recipes from it, that we love and still make. It's originally called Quick Honey Mustard Chicken Wings, but honestly, you can't tell it's a "honey mustard" flavor like you might be used to, with the chili sauce in it. Note: the chili sauce that's used here is not a Mexican chili sauce, this is found near the ketchup section of the grocery store.
I looked and looked online for a link to share for this recipe, but found nothing. I adapted the cooking method to make it easier and doubled the sauce here.
Saucy Honey Mustard Chicken Wings adapted from Betty Crocker
Brown drummettes in a large hot skillet, but don't cook all the way through, then place in a greased 9x13 pan. Combine sauce ingredients and pour over chicken. Bake in 350' oven for 25 minutes, spooning sauce over chicken during bake time.

So this new Bissell Cleanview Helix Vacuum Cleaner vacuum it was! Ironically just recently I literally threw our old one out the door because it wasn't doing any good. Sweeping carpet is NO fun (and we have a huge rug), so I was excited to get this. It was in stock, so once my PR Rep. ordered it for us, it was at my door in 3 days!! Very fast shipping and reliable tracking (UPS), and their shipping is free on most of their items too!!
So I didn't get my hammock chair to relax in, but my lovely Sister in Law did give us her ice cream/yogurt maker (#2 on my list there) so I'll at least get to enjoy some of that after cleaning! lol.
This vacuum is great, I've always had the ones with the bag, so I'm happy I finally have a bagless vacuum. I love the attachments too, the upholstery one is pretty cool. Once it's stuck on the nozzle it "vroooms" away and does a great job, getting under the cushions cleaned.
We have flagstone flooring throughout our entire house (except the 3 playrooms -ok my "office" & Mr.'s "office" & the kid's toy room- have a plush carpet), and I have large area rugs all around too. This vacuum did a superb job on the rugs and bare floor.

This took me weeks to find! The only store I found sold it, was out of stock for like 2 weeks! Finally they had it back in, and in both flavors, original and vanilla. The vanilla almondmilk is sweeter and to me best for adding to recipes or coffee, I could not just drink a glass of this. I added some to our cereal and it was great! The original almondmilk flavor was great! This I could drink a glass of! It has a slight hint of almond flavor, it's creamy and smooth. The kids are loving drinking these and pouring it on their cereal. Hopefully I'll have enough left to make this french toast this weekend! Yum! *Thumbs up for Silk Pure Almond!*
Pure Almond French Toast Challah, French bread or whole wheat Texas toast shine when teamed with almondmilk and a bit of spice. Serves 4.
2 eggs 1 cup Silk Pure Almond Original or Vanilla 1/2 teaspoon vanilla extract 1/2 teaspoon almond extract 1/2 teaspoon cinnamon 8 thick slices day-old bread 1/4 cup sliced toasted almonds, for garnish
Whisk together eggs, Pure Almond, vanilla, almond extract and cinnamon in a medium bowl. Gently submerge bread in egg mixture, one or two slices at a time and place on griddle over medium heat. Cook each side until golden brown and serve with real maple syrup, fresh berries and toasted almonds.

I decided I would make myself some lunch to try some of these products. I used their recipes for lettuce wraps and coconut chicken.
I thought these were great! I didn't have much chicken and I cut the recipe in half since only I was having these, so mine were a little more saucy. My lettuce leafs were huge so I really filled them up! I need to do more lettuce wraps for meals, loved them!
Thai Kitchen Red Curry Chicken Salad Lettuce Wraps Prep Time: 15 minutes Refrigerate: 30 minutes Makes 6 servings.
1/2 cup mayonnaise 1/4 cup sour cream 2 tbsp. Thai Kitchen® Red Curry Paste 1 tbsp. fresh lime juice 2 cups shredded cooked chicken 1/4 cup chopped celery 1/4 cup chopped red onion 6 large iceberg lettuce leaves or 12 Bibb lettuce leaves 1/4 cup dry roasted peanuts, coarsely chopped Chopped fresh Thai basil or cilantro (optional)
MIX mayonnaise, sour cream, Curry Paste and lime juice in large bowl until well blended. Add chicken, celery and onion; toss to coat well. Cover.
REFRIGERATE at least 30 minutes or until ready to serve.
SPOON chicken salad into center of each lettuce leaf. Sprinkle with peanuts and basil, if desired. Fold sides of lettuce over filling and roll up to serve.
Test Kitchen Tip: Thai basil has dark green leaves with purple stems and has a licorice flavor. It can be found in most Asian groceries. If unavailable, substitute Italian basil. I have recently started using coconut milk in recipes and love it! However I found this dish to be bland and I wasn't liking the peppers in it. I love Jasmine rice though!
Coconut Chicken found in this list Yields 4 servings
Ingredients: 4 boneless, skinless chicken breasts Salt and pepper to taste 2 Tbsp. vegetable oil 1 onion, chopped 1 red bell pepper, chopped 1 green bell pepper, chopped 2 cloves garlic, finely minced 1 can (14 fl. oz.) Thai Kitchen Premium Coconut Milk 1/2 teaspoon crushed red pepper flakes (or more if you prefer a spicy sauce) Cooked Jasmine rice
Directions: 1. Sprinkle chicken breasts with salt and pepper 2. Heat oil in a large skillet. Lightly brown chicken on both sides in hot oil, about 3 to 5 minutes per side. 3. Remove chicken breasts from skillet and set aside. 4. In same skillet, sauté onions, bell peppers and garlic until onions are translucent, 5 to 8 minutes. 5. Stir in coconut milk and red pepper flakes. Simmer 5 minutes over medium heat. 6. Return chicken to pan, spoon sauce and vegetables over chicken and continue to cook, uncovered over medium meat 20 to 30 minutes longer or until chicken is cooked through and vegetables are tender. 7. Serve with cooked Thai Kitchen Select Harvest Jasmine Rice or cous cous to soak up the sauce.

TWD again! Wow the week sure goes fast! Melissa of Love At First Bite chose Sweet Cream Biscuits. When we have biscuits here (which isn't often), we've got to make them with sausage gravy! I also made them into breakfast sandwiches for the kids, since they are not so big on the gravy.
Do you know I am not a big fan of biscuits? I always think they are dry and get stuck in my mouth, lol. But I do like them when they're hot with butter and honey! These were so good, light and fluffy. Since I made so much gravy (warning it makes lots) I made another batch of biscuits the next morning, only because I wanted another sausage and egg sandwich!
Hot Biscuits with Honey & Butter
Breakfast Biscuit Sandwiches (this was my fave!)
scrambled egg, cheese, sausage pattie, biscuit
Remember Dorie's Sweet Potato biscuits? I loved those! We've also made her buttermilk biscuits before. Go ahead pick any of these recipes, they are all good and easy to make! I bet you'll be having biscuits soon!
Brown sausage in large skillet over medium heat. Drain, reserving 2 TBL of drippings. Place sausage aside. Add reserved drippings to skillet and whisk in flour until blended. Gradually whisk in milk until smooth; add in seasonings (you could add to your liking). Return to heat, until thick (may need to add a little more milk if it becomes too thick). Stir in sausage. Serve with hot biscuits.
